It’s Monday!

That means its time for Waking Up Williams‘ weekly Mommas Munchies post. This week’s theme is Crockpot meals. I think by now yall know I love a good crockpot recipe; they’re usually easy & don’t require much effort! Yay! I actually have a label just for crockpot recipes which include good go to recipes like Crockpot Salsa Chicken, Mom’s Crockpot Meatballs, Rotel Spinach Dip (but this recipe is bland so spice it up!), & Crockpot Chicken Stuffing.

A friend a couple of years ago gave me a crockpot cookbook for my birthday. I usually combine the artichoke dip & spinach dip in it when I make that dip (which I wrote about here~ j/k I haven’t but I will soon!). So instead of my usual chicken recipes or crockpot dips, I went through what I’d flagged in the book (but not yet made) and thought I’d share the recipe. Hopefully this will motivate me to try making it soon!

Cheesy Broccoli Casserole
Ingredients
2 (10 oz) packages of frozen chopped broccoli, thawed
1 can condensed cream of celery soup
1 1/4 c shredded Cheddar cheese
1/4 minced onions
1/2 tsp celery seeds
1 tsp paprika
1 tsp hot pepper sauce
1 c crushed potato chips or saltine crackers

Directions
Spray Crockpot with non-stick spray. Add broccoli, soup, 1 c cheese, onions, celery seed, paprika & hot sauce to the crockpot & stir together. Cover with lid & cook on low for 5-6 hours or on high for 2 1/2-3 hours.
Uncover, top with chips & rest of cheese. Cook uncovered for an additional 30-60 minutes on low or 15-30 minutes on high, or until cheese melts.

Book also says can substitute spinach for broccoli and top with crackers or spicy crutons instead of the chips.

Mexican Momma’s Munchies


Its Monday which means Momma’s Munchies day over at Waking Up Williams. This week is a Mexican theme.

I was going to post this Chicken Enchilada Casserole recipe, then remembered I already had. I plan on making it one night this week. Our other favorite Mexican recipes: Creamy Chicken Enchiladas & Crockpot Salsa Chicken.

So instead I’m posting this very simple dip that my coworker brought to work today for snack day.

Cheesy Rotel Dip
Ingredients
Velveeta cheese
Can of Rotel (she used the spicy Mexican variety)
Tortilla chips

Directions
Cut up cheese into cubes. Add to small crockpot. Top with Rotel. Heat on low until melted & combined. Serve with tortilla chips. Watch out~ it’ll disappear quickly!

Easy Dinners

We’ve been trying to cook & eat in more recently. We haven’t always succeeded (we got take out from Manchesters tonight~ so good!), but Jason loved our dinner Tuesday night so I thought I’d share. Husband actually said it was in the top three meals I’d made (along with jar spaghetti with Trader Joe’s meatballs & Shannon’s Chicken~ he’s not high maintainence with food!).

Wondering what I made?! {This is almost embrassing!} I got the idea from the back of the Shake N Bake Barbecue Glaze box~ add 3 tbsp brown sugar & 1/2 tsp ground red pepper (cayenne) to the Shake N Bake mix. I used Target boneless, skinless breats. I served it with Kraft from the box MacNCheese & frozen Green Giant veggies. I have to admit, the chicken was REALLY good! The brown sugar gave a little sweetness while the cayenne pepper added quite a kick! Jason, who doesn’t do leftovers, actually had the third breast yesterday for lunch. I meant to take a photo to share, but we ate it too quick!
So if you’re looking for a quick, VERY easy chicken dish, try it!

My mom also gave me an easy recipe when I was home that my aunt made for them at the beach. It’s just a few mostly on hand ingredients & vegetarian. I hope to try it soon!

Black Bean Pasta
Ingredients
pasta
2 cans black beans, drained
1 can Rotel tomatoes
green pepper & onion, chopped
green olives, sliced
bay leaf, oregano, garlic salt, or other spices of your choice to your taste
2 tbsp olive oil
3 tbsp vinegar
Directions
Bring all ingredients to a boil then simmer for 30 minutes. Serve over your favorite al dente pasta.

Momma’s Munchies Chicken

I’m actually making it for Momma’s Munches this week! I didn’t do one for the last couple of weeks because I didn’t have any steak or pork or grillin’ recipes (I don’t eat pork or beef). But today’s recipe theme is chicken or seafood. While I LOVE seafood, for some reason, I don’t make it often. Chicken though is our stand by. Here are some of our other favorite chicken recipes: Creamy Chicken Enchiladas, Pineapple Crockpot Chicken, Sister-in-law’s Awesome Chicken Casserole, Poppyseed Chicken Casserole, Chicken Bruscheyta Bake, Crockpot Salsa Chicken, Crockpot Chicken Stuffing, Chicken Enchilada Casserole, Chicken Cranberry Ranch (love this one!), Crescent Roll Chicken (aka Shannon’s Chicken).

Here’s a recipe from my mom that I’ve been meaning to make but haven’t yet.
Everyday Broccoli Cheese Chicken
Ingredients
1 tbsp butter/margarine
4 chicken breasts
1 can Campbell’s broccoli cheese soup
1/3 c water/milk
1/8 tsp pepper
2 c broccoli flowerets
Directions
In skillet over medium heat, melt margarine then cook chicken for 10 minutes, or browned on both sides. Spoon off the fat.
Stir in the soup, water & pepper. Heat to boiling. Add broccoli. Reduce heat to low. Cover; simmer, stirring occasionally, for 10 minutes or until chicken is fork-tender & broccoli done.
Makes approximately 4 servings. Prep 5 mins. Cook 25 mins.

Beth’s Pasta Salad

My future sister-in-law, Beth made this pasta salad for her nephew Miles’ birthday party. I loved it. I’m not a pasta salad lover so that’s saying something. She told me & texted me the ingredients so I don’t know specifics. I plan to make it this weekend. I thought it’d be great for easy lunches & to take to the pool.

Ingredients
box of favorite pasta, cooked to al dente
bottle of favorite Italian dressing (She used Kraft Roasted Red Pepper Italian)
small can of chopped olives (I think she used a few, but I plan to use one)
zucchini, chopped
feta cheese

Directions
Mix all together & enjoy!
