New Favorite Beer

Our normal basic, always-have-it-in-the-frig beer is bud light. I even like cans best (you know, so you can use a coozie)! Blue Moon & Bud Light Lime are also spring/summer staples at our house. Jason’s on a bit of a weight loss kick (& I need to be too), so when Mom mentioned at their house that she’d heard Bud Select 55 was good, we thought we’d try it. Its becoming our new beer! It was great for a light beer on the beach last weekend & nice to have with dinner or watching TV. What else (other than water) can you drink for 55 calories?!

With that said, here’s a photo I took a few minutes ago right after I was done eating dinner & almost done with this one! If you’re looking for a new light beer, try it~ so yummy!

Jennandtonica’s Cheesy Sun Dried Tomato Bagels

The awesome Jennandtonica has made these twice for our Tacky Christmas Sweater Party. I was thought they’d be good to try with my family at the beach & she twittered me the recipe. I love the recipe~ not too many ingredients, quick & easy to make & oh so delicious!

Ingredients
3 Thomas 100% whole wheat Bagel Thins (Jenny’s used whole wheat mini bagels)
about 1 cup Italian 5 white cheese mix
about 1/2 cup light mayo
Julian Sun Dried Tomatoes sliced (Jenny uses TJ’s. We just got what Lowe’s had)

Directions
Turn on oven to broiler setting.
Split bagels & place on baking sheet.
If not precut, slice sun dried tomatoes.
Mix cheese with just enough mayo to make it stick together.
Top bagels with cheese mixture.
Add sun dried tomatoes to top of bagels.
Bake bagels until cheesy melted & bagels browned.

We quartered bagels into bite sized pieces. Everyone loved them just as I had when I’d had Jenny’s verison!
The bagels weren’t super crispy for us though. Not us if its because we sprayed the pan with pam or not cooked bagel enough. Jason suggested that we could try broiling bagel for a minute next time before topping. Might try that next time.

Parmesan Tilapia

This tilapia recipe was posted on twitter today and I thought it sounded great. I’m posting it so I’ll remember for the next time we’re cooking tilapia.

Ingredients

1/4c parmesan cheese
2 T butter, softened
1 T + 1.5 t mayo
1 T fresh lemon juice
1/8 t dried basil
1/8 t ground black pepper
1/8 t onion powder
1/8 t celery salt
1 pound tilapia fillets

Directions

Preheat oven’s broiler. Grease a broiling pan or line a pan with aluminum foil.
In a small bowl, mix together the cheese, butter, mayo, & lemon juice. Season fish with dried basil, pepper, onion powder & celery salt. Mix well & set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2-3 minutes. Flip the filets over & broil a couple more minutes. Remove the fillets from the oven & cover them with the parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned & the fish flakes easily with a fork. Be careful not to over cook the fish.

Rotel Spinach Dip

tMy recipe is a take on Kelly’s listed on her recipe blog. I thought I had already posted this, but realized not when I searched my blog before making it tonight.
Ingredients
1 can Rotel
1 package frozen chopped spinach, thawed & drained
8 oz 1/3 fat cream cheese
about 1 cup mozz cheese
parm cheese (I just shook some out after reading that Kelly’s recipe used it also)

I put everything in my mini crockpot and cooked until warm & melted. We served with scoops.

Banana Bread Muffins

Thanks to my new twittering obsession, I found out that Alethea was making these today. She linked the recipe from allrecipes.com. Jason & I both love banana bread & we had 3 old bananas that either needed to be thrown out or turned into something yummy! I changed a few little things based on comments from other people.
Sarah’s Banana Bread Muffins
Ingredients
1 c white sugar
1 egg
1/2 c vegetable oil
3 ripe bananas
1/4 c chopped walnuts
1/2 t vanilla
pinch cinnamon
1 t baking soda
2 c flour
1/2 t salt

Directions
Preheat oven to 350. Place muffin cups or grease muffin pan.
Mix sugar, oil & egg until creamy & light yellow. Add vanilla, mashed bananas, walnuts. Add flour, cinnamon, baking soda, and salt. Mix until combined & smooth. Spoon batter into muffin cups. Allrecipes said would make 12. I made 19. 🙂
Recipe said bake for 30-40 mins. I took out at 25 and I think they were perfect~ fork put into muffin came out clean.
