SIL’s Chicken Casserole

While we were in GA about a month ago, Jason’s sister made this recipe of a big group of us. It was awesome. I got the recipe from here and hoped to make it while we were at the beach but we ended up having other things. I made it this weekend and it was so good & easy!! It made enough for us to have it Friday night then again throughout the day Saturday.
Ingredients
3-4 Chicken Breasts, cooked and chopped
1 can cream of chicken soup
8 oz sour cream
1 cup chicken broth
1.5 sleeve Ritz crackers
1/2 stick butter/marg

Directions
Cook chicken (I boiled but SIL said the best is crock potting the chicken) and cut up into bite sized pieces. Place chicken on bottom of baking dish (I used 9×11). Combine soup, sour cream & broth. Top chicken with mixed liquids. Bake for 20-30 minutes. Crumble up Ritz crackers (I only had 1/2 sleeve but would use more next time) and mix with melted butter. Top dish with cracker/butter and cook for another 10 minutes or until you think it’s done.
My SIL served with homemade mac n cheese, green beans, peas, biscuits and sweet tea~ gotta love southern cooks! We made kraft mac. 🙂 I think it would be good with rice too. On Sat we ate the leftovers without anything and it was great. Enjoy!

Strawberry Daiquiri Cake

My friend Brooke from work gave me this recipe a while ago because she thought it sounded like something I’d love. I remembered this receipe last night and thought I’d post it so we could make it down at the beach using fresh strawberries from Holden Farms. I can’t wait!
Strawberry Daiquiri Cake (Brooke’s friend Natasha)
Ingredients:
1 box cake mix (vanilla, yellow, strawberry) or enough gluten free cake mix to make a 2 layer or sheet cake
1 small box instant vanilla pudding
1 14 oz. can sweetened condensed milk (fat free if desired)
1 16 oz. container of Cool Whip (Lite if desired)
1 can frozen strawberry daiquiri mix, thawed
Fresh strawberries, sliced with sugar sprinkled on them (or can use 1 bag frozen strawberries, thawed & sliced with sugar). Leave some juice on them.
Red food coloring (optional)
Directions:
Mix cake as directed on package, adding small box of instant pudding. Bake cake as directed on package in 9×13 greased baking pan. Let cool 10 minutes then turn cake out onto wire rack or wax paper and allow to completely cool.
To make frosting: Stir sweetened condensed milk & daiquiri mix together. Then fold in cool whip. A drop of red food coloring may be added if desired for color (but not too much or will make frosting too runny.) If this is done before cake is ready to put together, put this mixture back in refrigerator.
Split cake into 2 thin layers using dental floss. Put the bottom half back into pan. Use fork to punch holes in cake.
Spread enough strawberries (& juice) to cover layer of cake.
Spread layer of frosting on top of strawberries.
Put top half of cake over frosting. Use fork to punch holes in cake.
Add more strawberries (if desired) then frosting on top half of cake. Can put strawberries under frosting and/or on top of frosting for decoration.
Refrigerate. (Frosting will set up a little more once refrigerated.)

Spinach Dip

I also got this recipe from Kelly’s Korner’s recipe blog. Its a lil twist on the normal spinach dip. I made it last night for a Chi O Alum event that I hosted. I think everyone enjoyed it~ there was none left at the end of the night! I made this in my mini crock-pot instead of baking/microwaving as her recipe says.
Ingredients
1 pkg frozen chopped spinach
8 oz cream cheese (used light)
8 oz monteray jack cheese (I used mozzerella because I had that already, but I think the extra spice from the jack would’ve been good)
6 oz parm cheese
1 can rotel tomatoes
Directions
Thaw spinach & drain. Add ingredients to crock pot. Served with pretzel chips & melba toast.
Kelly’s recipes says to cook spinach, add cheese & microwave (3-5 mins) until melted & liquid. Add rotel and mix.

Poppyseed Chicken

I got this recipe from Kelly’s Korner’s recipe blog (link to her regular blog on the right). I made it this weekend and husband and I both enjoyed it. We didnt have Ritz crackers so I used pretzel chips, but next time I’ll use Ritz. I halved the amount of sour cream, soup, and butter and thought there was plenty of sauce. Enjoy!
Ingredients
2-3 chicken breasts, boiled and cut into small pieces
8 oz sour cream (used light)
1 can of cream of chicken soup
approximately 2 T poppyseeds
ritz crackers crumbled
1/2 stick of butter
Directions
Mix first 4 ingredients together and put in baking dish. Cover with crushed crackers. Melt butter and pour on top. Bake 20-30 minutes at 350.

New Crockpot Book!


For Valentine’s Day, my mom & Dad gave Jason & I a Barnes & Noble gift card. We went by there tonight. Jason didn’t find anything, but I found a 3 books in 1 Crock Pot cookbook. One section is just chicken, soups & stews, and 5 ingredients or less. So excited to try out new recipes and it was only $9.98!! I’ll post the recipes on here if they’re yummy. (You know you’re old, when you get excited about buying a cookbook!!)
