weekend
My parent’s came into town this weekend. We have a tradition of going to the NCSU/WF game with one of my good friends from college and her parents. I made blueberry scones for breakfast, whipped together a parm/ranch veggie dip (using a herb pack given to me by a friend, ranch dressing & sour cream), and a layered Mexican dip (except that I used HT’s refried black beans and omitted the olives & onions b/c I didnt have them on hand). All three got rave reviews! We also had beer, mojitos, bloody marys, Bojangles chicken, slaw & beans, and birthday cake (yay for Brett turning 30!). Even though it rained a little bit, we didn’t mind and we were prepared this time with raincoats & ponchos.
To make it an even better weekend, NCSU won! I’m such a huge NCSU football fan and am thus so excited that they won the game Saturday night. I’d resigned myself to them losing, but it’s so much more fun when they win! My dad laughed and said they only have to win out to go to a bowl. Not sure that’ll happen, but I’ll be wearing red the next two Saturdays to support the pack. 🙂
Mom’s White Bean Chicken Chili
So I saw Jenni’s post about chicken chili and it sounded so good that I emailed it to a friend about me making it for our small group on Monday night. She reminded me that my mom makes a killer white bean chicken chili too and asked for that recipe. She remembered it included beer which we both thought was fun! So to remind myself of the recipe and to share it with the world here goes. BTW I think I’m going to combine Jenni & Mom’s recipes for Monday. Hope they turn out well. I’ll share pictures later. Oh and I’m going to try out the Oatmeal/PB cookies a few posts down Monday too!
Ingredients
1+lb of cubed chicken
48oz Great Northern beans
16 oz salsa of your choice
2 c of chicken broth (up to 2 cans ok)
1 can beer
2 tsp cumin
2 tsp garlic powder
4 oz (small) can of green chilis
15oz can sweet corn, drained
1 c monteray jack cheese
Directions
Combine all ingredients. I plan on crockpotting them all day. Use about 2/3 of cheese in mix and top your bowls with the rest.
I’m planning on also adding oregano, cayenne pepper, & flour like Jenni did and also adding a bit of sour cream on top with the cheese.
Sorta Homemade Oreo Brownies
A coworker of mine has brought these into work a few times and I finally tried to make them myself. I’m not a huge brownie fan, but I am a huge oreo fan!
Ingredients
20 Oreo’s (I used double stuffed)
1 box Duncan Hines family style brownie mix
3 eggs
1/4 cup water
1/2 cup vegetable oil
Vanilla Frosting
Directions
Preheat oven to 350F. Grease bottom on pan (I used a 8×11).
Crumble Oreos. Set aside 1/3 or so of the crumbled Oreos.
Add brownie mix, eggs, water & vegetable oil. Stir until blended.
Add Oreos 2/3 crumbled Oreos to mix and blend.
Bake for approximately 35 minutes (25 for 9×13 pan, 35 for 9×9, 40 for 8×8). Brownies are done when toothpick inserted an inch from the edge of pan comes out clean.
Cool in pan on wire rack.
Once cool, top with frosting and the rest of the oreos!
Peanut Butter Oatmeal Cookies
Today I baked the pumpkin chocolate chip bread and oreo brownies for a sorority alum book club that’ll be at our house tomorrow. The State game isn’t on TV so I baked instead!
I haven’t made these yet, but they sound good so I’ll probably try them out and share pictures of them in the next week or so. I found these recipe on Recipezaar.com. I was planning on omitting the raisins (not a fan) but I thought I’d post it as it was online then edit it after I make it for any changes. The recipe’s supposed to make 108 cookies so I might try to scale down the recipe so it doesn’t make so many.
Ingredients
1 c butter or margarine
2 c sugar
3 eggs
1/2 c peanut butter
3 1/2 c oats
1 c flour
3/4 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 c raisins
Directions
Cream butter; gradually add sugar, beat well.
Add eggs and peanut butter, beat well.
Combine oats, flour, soda, salt & cinnamon; add in creamed mixture and beat well.
Stir in raisins.
Drop dough by heaping teaspoonfuls onto lightly greased cookie sheets.
Bake at 350F for 10-11 minutes.
Cool slightly on cookie sheets; remove to wire racks.
