Banana Cupcakes/Muffins

When Jason started to have stomach problems a couple of weeks back, he found this recipe under a heart-burn free diet recipes on about.com. I had all the ingredients on hand so I made them that same night and I think 3 times since. The below recipe made right around 12 or 13 cupcakes for us.
We don’t love A LOT of icing on our cupcakes. I made the icing as the below recipe says and only used half for a batch. The I froze it only to thaw it a week or so later when we made another batch.

Banana Cupcakes Ingredients:
1 c flour
1/2 teaspoon baking salt
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 granulated sugar
1/4 c butter
1 teaspoon vanilla extract
1/2 c mashed ripe bananas (I used a little more the second time around and they were more moist)
4 large egg whites
1/4 c fat free sour cream

Preheat oven to 350. Spray a 12 cup muffin tin with nonstick spray. In small bowl, stir together flour, baking soda, salt & cinnamon until well blended. In a large bowl, cream together the butter & sugar. Add vanilla and bananas to the butter/sugar mixture and beat thoroughly. Stir in half the flour mixture and the sour cream. Add the remaining flour mixture and stir until just combined. Spoon the batter into the muffin cups. Bake for 25-40 minutes or until toothpick inserted in a cupcake is clean. Cool for 15 mins before removing from pan and icing.

Cream Cheese Icing
1 1/2 c powdered sugar
8 oz fat free cream cheese, softened
1 teaspoon vanilla extract

Beat all the frosting ingredients together in a medium bowl until creamy. Spread frosting thinly over the cupcakes using knife or spatula. Enjoy!

Strawberry Daiquiri Cake

My friend Brooke from work gave me this recipe a while ago because she thought it sounded like something I’d love. I remembered this receipe last night and thought I’d post it so we could make it down at the beach using fresh strawberries from Holden Farms. I can’t wait!
Strawberry Daiquiri Cake (Brooke’s friend Natasha)
Ingredients:
1 box cake mix (vanilla, yellow, strawberry) or enough gluten free cake mix to make a 2 layer or sheet cake
1 small box instant vanilla pudding
1 14 oz. can sweetened condensed milk (fat free if desired)
1 16 oz. container of Cool Whip (Lite if desired)
1 can frozen strawberry daiquiri mix, thawed
Fresh strawberries, sliced with sugar sprinkled on them (or can use 1 bag frozen strawberries, thawed & sliced with sugar). Leave some juice on them.
Red food coloring (optional)
Directions:
Mix cake as directed on package, adding small box of instant pudding. Bake cake as directed on package in 9×13 greased baking pan. Let cool 10 minutes then turn cake out onto wire rack or wax paper and allow to completely cool.
To make frosting: Stir sweetened condensed milk & daiquiri mix together. Then fold in cool whip. A drop of red food coloring may be added if desired for color (but not too much or will make frosting too runny.) If this is done before cake is ready to put together, put this mixture back in refrigerator.
Split cake into 2 thin layers using dental floss. Put the bottom half back into pan. Use fork to punch holes in cake.
Spread enough strawberries (& juice) to cover layer of cake.
Spread layer of frosting on top of strawberries.
Put top half of cake over frosting. Use fork to punch holes in cake.
Add more strawberries (if desired) then frosting on top half of cake. Can put strawberries under frosting and/or on top of frosting for decoration.
Refrigerate. (Frosting will set up a little more once refrigerated.)

Kinda Healthy Banana Oatmeal Cookies

I got this recipe from a sparkpeople email I received today. I signed up for sparkpeople a while ago and have done nothing with it but saved a few recipes. I was in the mood to bake a little tonight but didn’t want to have a ton of cookies laying around calling my name all weekend either!
The recipe said 24 servings and I made exactly 24 small cookies. I think they’re good, but they do taste kinda healthy.

Ingredients
3/4 c flour (recipe calls for unbleached, I used all-purpose)
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground allspice
1 c quick cooking oats
1/3 c raisins (I omitted)
1/4 c chopped walnuts (I omitted)
1 large egg white
3 tbsp butter, cut in 1/2 in pieces
1/2 c packed dark brown sugar
1 small banana, cut in 1 in pieces
1 tsp vanilla

Directions
Set baking racks in top and lower third of the oven. Preheat oven to 400.
Whisk together flour, salt, baking soda, cinnamon, and allspice in mixing bowl. Mix in oats, raisins and nuts.
In a blender on medium speed, mix egg white, butter, and sugar until smooth. Blend in banana and vanilla until smooth. Pour banana mixture into dry ingredient bowl, mixing with spatula until well combined. Batter will be fairly stiff.
Drop batter in walnut sized spoonfuls onto baking sheets, spacing cookies about 2 in apart. Flatten them slightly with the back of a wet spoon, wetting spoon frequently between cookies.
Bake 10 mins. Switch position of pans in oven. Bake for additional 5-8 mins (5 mins was more than plenty for in my oven) or until cookies are golden brown and almost firm in the center. Transfer to cool racks. Can be stored in airtight container for up to 1 week.

Heavenly Fruit Dip

Ingredients
12 oz container whipped topping, thawed (used cool whip)
1 small jar of marshmallow creme
8 oz package of cream cheese
2 small cartons of strawberry yogurt
Directions
Mix ingredients together and refrigerate until ready to serve. Good with pineapple, apples, strawberries, grapes, etc. Other yogurt flavors can be substituted in place of strawberry.

We made this for the baby shower yesterday and it was a huge hit! It was really light and fluffy.
