Valentine’s Day 2010

Today’s been a pretty good Valentine’s day. Hope everyone’s had a happy one! Day started out great~ Jason let me sleep in til 10:45! Love it!! I then made blueberry pancakes with the TJ’s buttermilk mix I got for the $1.99 on Friday. They were very fluffy & yummy. I served them with cranberry/oj mimosas left over from Kelly’s kitchen shower yesterday (another post to come). I continued to enjoy mimosas the rest of the morning which made studying for my INS 21 test fun. 🙂
I’d been stalking RedBox all week to find Couples Retreat. Last night it popped up at the Kroger near our house! So Jason & I watched it this afternoon. Although a lot of the funny parts were in previews, I still really enjoyed it. I’m trying to keep up with my goal of watching more movies this year (I’m now looking to rent Time Traveler’s Wife next).
We decided to make dinner at home tonight to celebrate Valentine’s Day instead of fighting crowds & spending a lot of money out. I made my SiL’s chicken casserole & Jason helped me make garlic rice (from a box, were not that good!). Both turned out really well & we have yummy leftovers for lunch/dinner tomorrow!
I’m taking one of my hopefully last insurance tests in 11 hours so I better get off the computer & study. That & our last skinny cow strawberry ice cream sandwich is calling my name!

Parmesan Tilapia

This tilapia recipe was posted on twitter today and I thought it sounded great. I’m posting it so I’ll remember for the next time we’re cooking tilapia.

Ingredients

1/4c parmesan cheese
2 T butter, softened
1 T + 1.5 t mayo
1 T fresh lemon juice
1/8 t dried basil
1/8 t ground black pepper
1/8 t onion powder
1/8 t celery salt
1 pound tilapia fillets

Directions

Preheat oven’s broiler. Grease a broiling pan or line a pan with aluminum foil.
In a small bowl, mix together the cheese, butter, mayo, & lemon juice. Season fish with dried basil, pepper, onion powder & celery salt. Mix well & set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2-3 minutes. Flip the filets over & broil a couple more minutes. Remove the fillets from the oven & cover them with the parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned & the fish flakes easily with a fork. Be careful not to over cook the fish.

Rotel Spinach Dip

tMy recipe is a take on Kelly’s listed on her recipe blog. I thought I had already posted this, but realized not when I searched my blog before making it tonight.
Ingredients
1 can Rotel
1 package frozen chopped spinach, thawed & drained
8 oz 1/3 fat cream cheese
about 1 cup mozz cheese
parm cheese (I just shook some out after reading that Kelly’s recipe used it also)

I put everything in my mini crockpot and cooked until warm & melted. We served with scoops.

First Snow of 2010

The first snow of 2010 has been pretty uneventful for us. I made it to the gas station and Food Lion for a beer & random food run before the snowy weather began.
My parents were driving down to Charlotte last night so we stayed in touch with them. They hit heavy snow/ice & hard to see roads between Lexington & Concord but roads were just wet when they arrived safe & sound in Charlotte.
I think we got around 5 or 6 inches here. We didn’t really go outside at all today. We opened the door carrying Moe to see what he thought. Once again like these pictures taken last year ( here), he wasn’t a fan! Ha, I don’t blame him. I kinda wanted to go outside and play but Jason wasn’t into it and I felt dumb to get all dressed up to walk around alone. So I worked more on Echo; almost half done with 450 pages read!
I’ll take some pictures tomorrow of the snow since I’m planing to venture out to get together with Brooke & Eliza & Holly & Lilly. 🙂

Why we can’t find the remote…

For some reason we have two TWC remotes for our TV. One on “Jason’s couch” and one usually kept on “my loveseat”. The joke is that I somehow always lose/misplace/hide mine. The other night, I couldn’t find it and swore it wasn’t me. This is where we found it (& a Steinmart coupons!)… under Moe’s 17 pounds of fluff!!
