8 cycles down…

I’m not quite halfway through cycle nine, but just realized I hadn’t done a cycle 8 TTC post {anyone else like wow, it’s already been 8 cycles?!}. Here’s my chart:

We were both really confident that this past cycle could have been the ONE! We felt like we were in a really good place relationship-wise. We thought we’d timed the “baby dancing” pretty perfectly. So much so that the girl {me} who swears by the “drink til its pink” motto actually didn’t drink that much during the 2ww. Of course that proved pointless {minus the fact that I didn’t have a hangover after a wedding for the first time maybe ever} when I started spotting on the way home after our beach/Wilmington wedding weekend. Oh well, there’s always this cycle…

Apple Bread

So during my work trip {aka fall mountain fun}, two of the agents I work bought me & a couple of my coworkers 1/2 pecks of apples from here. I chose Granny Smiths, Golden Delicious & Mutsu apples. A 1/2 peck is a lot of apples. I didn’t count but, I’ve pretty much had an apple a day since we got back last Wednesday as well as used 3 for the apple cake I made last Friday which left 3 (two Granny & one Mutsu). I figured the 3 left would be perfect for a apple recipe this weekend.

I asked my favorite sources {twitter & facebook} for recipe suggestions. I might try applesauce or apple butter next time, but Mrs Lushers apple bread recipe sounded too awesome to pass up. Mrs Lushers’ recipes always look amazing but usually intimidate me. I rose for the challenge this time except I left out a few of her ingredients that I didn’t have on hand. Below is the recipe I made. It’s a mix of her apple pecan flax bread which is adapted from this Good Things Catered’s recipe as well as allrecipes apple bread recipe.

Apple Bread
Ingredients
3/4 c all purpose flour
3/4 c whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
pinch ground nutmeg {not sure what a pinch was so I just sprinkled a little bit in}
1 c light brown sugar
1/4 c applesauce {plus a little more}
1/4 c butter {I used a little less}, melted & cooled
1 egg, beaten plus 1 egg yolk
1/2 tsp vanilla
close to 2 c apples, peeled, cored, & diced {I used one medium Granny Smith & 1 small Mutsu}
little white sugar to sprinkle {I didn’t have raw sugar or turbinado}Directions
1- Preheat oven to 325. Spray a loaf pan with pam.
2- In a medium bowl, combine flours, baking soda, baking powder, salt, cinnamon & nutmeg. Whisk until mixed & set aside.
3- At this point I microwaved butter until melted & set aside. I then remembered I hadn’t peeled/cored/chopped apples so I did that at this point.
4- In stand mixer, beat together applesauce, butter, & sugar until combined. Add eggs one at a time. Add vanilla and mix until combined. Turn mixer down to low. Add dry mixture a little at a time, mixing just until combined.
5- Fold in apples {also pecans & flax if you have them} by hand with rubber spoonula.
6- Pour in prepared loaf pan & spread evenly. Sprinkle top with turbinado & bake for 80-90 minutes or until toothpick comes out clean.

Fall Decorating

A couple great things about having my parents in town (besides the obvious~hanging out with them), a clean house & Mom around to help me decorate for fall! We got out my Halloween stash Saturday night and set it out around the house. The wreath was too thick for the front door so I put in the foyer instead. I put a little wooden owl on the front door.We also took a trip to Walmart and brought a pumpkin, gourds, and some pansies for the mailbox & front stoop. Happy Fall Y’all!

Fall Mountain Fun

I’m back from two fun 3 day trips. I should talk about them in order, but I haven’t received the wedding photos yet so I’m blogging about the work trip first.

Two of my underwriting coworkers and I left Monday at 1 to head to the mountains. We arrived in the Hendersonville/Flat Rock around just in time for the hotel’s happy hour. We stayed at Mountain Lodge which was an amazing quaint place. It is even prettier in person. They had appetizers and wine from 5-7 daily & hot breakfast every morning. Some of my agents met us for dinner at Mezzaluna in the cute downtown Hendersonville Monday night. I had a Sweetwater Blue, shared appetizers with the group & the Manicotti for dinner. My friend ordered a pasta with peas that she didn’t love, so she helped me finish mine!

Tuesday morning started out early as we made our way up the mountains to Lake Lure. We were there for a district meeting which met at Rumbling Bald Resort. Some of the group went on a quick lake tour and others had a horseshoes tournement. I chatted & cheered them on. We also had lunch under a tent on the lake shore {burgers & hot dogs~ I ate cheese & tomato on a bun~ as well as the best potato salad ever}. Most everyone left after lunch, but we hopped on golf carts and hung out {& did a little golf clapping} with the 4 foursomes that we’re playing golf. It was so pretty with great views so I took a few photos with my phone of Eileen & Gwen & the course.
After golf we went to one of Eileen’s agent’s homes on the lake. He & his wife took us out on an almost 2 hour ride showing us all the beautiful homes & even the Dirty Dancing “I carried a watermelon stairs”. I’d left my camera (aka my phone) at their house, but Eileen took these while we were out on the water.
After the boat ride which included a few appetizers and beers, we went to dinner with them at View at the Point. Here’s the view of the lake from the restaurant at dusk.We ended the night in our room with a bottle of wine & Dancing with the Stars. 🙂

Wednesday morning we stopped by three different offices: Transylvania, Henderson & Polk on our way back to Raleigh. Two of the Henderson Co agents took us to a farm stand and bought us fresh NC apples. I also bought hot cider {it was a chilly morning!} and an apple cake mix that I plan to make tomorrow night. We left western NC by 1 and they dropped me off at home before 5. I had a great time visiting a new-to-me part of the state and getting to know the people I talk to over the phone most of the day. I’m calling this my thankful Thursday post because I really am grateful that I work with such awesome people and a company that pays for me to go visit with them!
Also thankful for picnik which I tried for the first time tonight! You’ll be seeing more of their photo collages!

Work Trip

Last weekend we went to OIB & Wilmington for a wedding. I will post photos later once I get them from my parents.

We returned from the beach (with a sunburn to prove it!) yesterday afternoon. I left today for the NC mountains. I’ll be out here until Wednesday afternoon. We’re going to a meeting tomorrow at Lake Lure and the spending the rest of the time hanging out with the agents I work with. I’ll post again once I’m back in town!
