Easy Seasoned Chicken

I’d stocked up on organic chicken last time I saw it on sale. I had some in the frig to use last week & needed a quick, easy week night recipe. After searching online, I settled for this one.

Three ingredients y’all:
chicken breasts, I used boneless, skinless
EVOO
Lawry’s seasoning {any seasoning salt would work}

Pat dry the chicken with a paper towel. Using a basting brush, brush EVOO onto chicken. The original recipe said about 1/4 c EVOO for a pound of chicken. I found I didn’t need that much & next time I won’t brush on quite as much as I did {see photos that oil pooled in dish}. Maybe start with 1/8 & pour more into your measuring cup/bowl if needed.

After brushing, sprinkle seasoning salt on both sides of the chicken breast before placing it in a baking dish.

I baked the chicken for 30-40 minutes on 350. If you use skin-on &/or bone-in chicken, bake another 15 minutes.

I served it with sweet snap peas & sweet potato fries left over uneaten from my take out the night before. The chicken came out so delicious that my picky-eater husband is asking for me to make it again tonight!

Week 37 y’all & I’m still going strong with project 365.

Day 267: I had the pleasure Saturday to visit with K & get in some N snuggles while in Northern VA for a bridal shower for future sister-in-law Beth.

Day 268: Sunday was the first time I’d seen Moekitty since the previous Monday morning. We got in some cuddles while waiting for husband to come home from work.

Day 269: Monday was a pretty chill night after a busy first day back at work.

Day 271: Not sure what happened Wednesday, but I didn’t take any photos.

Day 272: Thursday, husband & I celebrated our four year wedding anniversary with a candle-lit dinner at Vivace then opened sweet cards at home. Wearing a little different pjs than I was four years ago {what, you don’t wear Christmas pj pants in Sept?!}

Day 273: I woke to this view Friday morning. It’s very normal but had been very missed the during my weeks in Edenton.
