Cheryl & Brian’s Wedding!

The weekend before this one, we were down in Greenville, SC for my good friend from college’s wedding. It was a great time for sure! We actually ran into the bride taking some pictures in front of the hotel before the wedding. The photographers who are friends of theirs, did an awesome job, but they also had easy on the eye bride & groom! The locations were fabulous. Quite a trip up the mountain to get to “Pretty Place” for the ceremony, but man it was a view!! The ceremony itself was really special & very them. We passed their wedding rings around to all the guest for them to warm them with love.Cheryl was gorgeous! She and Brian looked so happy & excited. I cried for the first time in a while at the wedding! The fall foliage made a beautiful back drop!After the trip down the mountain, we regrouped to celebrate the new Mr & Mrs Cass! The cocktail hour was outside with yummy appetizers and Electric Lemonades as the signature cocktail. The Chi O girls crowded around the couple. Their first dance was really sweet.The reception was at a restaurant called The Lazy Goat. Funny name, but great place~ good food & drinks & fun! Cheryl & her Chi O sisters. We had a great time catching with college friends & partying with some of our favorites!They left to bubbles, which make for fun photos; then they ran back inside to keep the celebration going on. Beth, Kevin & I ventured out to The Oyster, a cute lil bar on the other side of the hotel for an extra late night beer or two. 😛

Pumpkin Cupcakes with Cream Cheese Frosting

We had a chill weekend at home all day Saturday. I was attempting to sleep in when Moekitty woke me up at 8:23 to be fed! So waffles for us & kitty food for Moe and the couch it was. We watched lots of football games, took a few naps, and I got caught up on some Real Simple & O magazine reading. I’ve decided that I’m growing up; I like and feel like I relate to those magazines than the Marie Claire & Glamour I used to subscribe to. I ripped out a couple of recipes to try from both magazines, including this one.I’m looking forward to trying this recipe this week for a Chi O alum dinner club & also to give to then NCSU Chi O new member class retreat this weekend. It sounds easy & I’m thinking the pumpkin puree will make the cupcakes very moist. I’m going to double the recipe, but here’s the 24 cupcake recipe from Real Simple.

Cupcake Ingredients
1 box yellow cake mix (plus ingredients called for in the package directions)
1/2 tsp pumpkin pie spice
15 oz can pumpkin puree

Frosting Ingredients
2 8 oz bars cream cheese, at room temperature
2 c confectioners’ sugar

24 pieces of candy corn

Directions
Heat oven to 350F. Put cupcake liners in cupcake pans. Prepare cake mix as directed, but add pumpkin pie spice & substitue the can of pumpkin puree for the water.

Divide batter amoung the muffin tins and bake until toothpick comes clean. Usually 18-22 minutes. Let cool.

Meanwhile, using the electric mixer, beat the cream cheese and sugar until creamy. Spread frosting on top of cupcakes and top each with a piece of candy corn.

Real Simple says that the cupcakes can be made up to 2 days before hand; just store at room temperature and keep covered. Frost up to 12 hours before serving.

So excited!

I’ll write a post & add pictures from our fun trip to OIB & Wilimington last weekend.
But tonight I’m so excited about this upcoming weekend! My parents and my brother & his girlfriend are coming down to visit us tomorrow for the weekend. I’ve been cleaning all week (probably not as much as I should’ve but they know us!) and planning this for a few months!
On tap: hanging out playing Wii & trying the beer my parents made Friday night. Saturday AM & day, Costco muffins for breakfast, girls do a lil shopping, pack up the cars & head out to Carter-Finley for the Duke game. We have an awesome parking pass thanks to Dad & the Varsity Club. Plans to grill & munch & enjoy a few cold beverages and hopefully stay dry! It’d be nice if the Wolfpack won too! Sat night, chill at the house. Sunday lunch; PF Changs to celebrate my new job & Jason passing is CCNA! So excited!!!!

Bocce

I don’t think I’ve posted yet about my grandparents’ new puppy! They welcomed him home right before July 4th. I even got him a lil July 4th T-shirt for the occasion (but he ran round too quick for me to get a good pic of him in it!). Bocce is a Bishon Frise and only weighed around 3 lbs the first time we saw him. He fit under the couch, the end tables & the lazyboy foot rest!Jason & I were down there at the end of July and he’d grown so much! (But ran around so much Nana had to hold him still)We saw him again labor day weekend and Mr. Bocce is now around 7 lbs. Mom & I took him on his first beach walk that weekend, but we forgot to take a camera with us. Here’s one of my dad & Bocce. He loved trying to chew on Dad’s heating pad wraps which meant his lil booty was in my dad’s face!!

Magnus & Amber’s Wedding

Jason & I went to the wedding of my friend & former coworker Amber & her new husband Amber over labor day weekend. I was the greeter for the wedding. Sadly I don’t have a good picture of the new husband & wife. But here’s Amber & me!The wedding was at St Frances on Leesville and the reception was held at The Umstead.
They did an awesome job with it~ the big and little details were all great! She decorated the cocktail tables with whole limes with one gerbera daisy then the main dining/dance area tables had those amazing flowers!The DJ was great, the food was very upscale & yummy, and awesome cake!Iit was wonderful to catch up with my Farm Bureau buddies!
