After months of hearing about the Twilight series and different groups of friends all being fairly obsessed, I gave into it. My sorority alum group is discussing the book and watching the movie on 3/22. I’m about the open up the first book while watching my grandmother take a nap. Im here with her in Charlotte for the weekend visiting because she fell last Sat and broke her hip. My aunt and I are giving my grandfather a break today and tomorrow and hanging out in the rehab center. And Im getting to see and hang out with my friend Beth tonight. Hope everyone has a good weekend. Ps on the way here I was jamming out to Taylor Swift’s Fearless~ loving it!

New Crockpot Book!
For Valentine’s Day, my mom & Dad gave Jason & I a Barnes & Noble gift card. We went by there tonight. Jason didn’t find anything, but I found a 3 books in 1 Crock Pot cookbook. One section is just chicken, soups & stews, and 5 ingredients or less. So excited to try out new recipes and it was only $9.98!! I’ll post the recipes on here if they’re yummy. (You know you’re old, when you get excited about buying a cookbook!!)
Valentine’s Dinner Chicken Bruschetta Bake
We decided to avoid the crowds & expense that going out on Valentine’s Day entails. I bought chicken on sale at Lowes Foods and wanted to make this recipe. We also did a Caeser Lite bag salad & used TJ’s Garlic & Herb pizza dough to make breadsticks. Oh and I picked up a bottle of Kitchen Sink white wine at Total Wine. It was a very yummy nice Valentine’s Day dinner! We also got Wal-E from red box. We’d not seen it yet & loved it!
Ok, for the recipe from Kraftfoods.com:
Bruschette Chicken Bake
Ingredients
1 can diced tomatoes, undrained
1 package Stove Top Stuffing Mix for Chicken
1/2 c water
1/4 tsp garlic powder (orginial recipe called for 2 cloves garlic mined)
1-1.5 lb boneless skinless chicken breasts, cut into bite-sized pieces
1 tsp dried basil
1 c mozzarella cheese (used 2% milk shredded)
Directions
Mix tomatoes, stuffing mix, water & garlic powder in bowl just until stuffing mix is moistened.
Layer chicken, basil, and cheese in 9×13 baking dish.
Top with stuffing (and a little more cheese if you want).
Bake 30 min or until chicken done.
New Kitchen!
Here’s a few pictures of the improved kitchen. We stripped the wallpaper, cleaned off the glue, primed then painted it using Valspar’s Creamy Oat in the kitchen/bath finish. We added the knobs on the cabinets and also new hardware for switches and outlet covers.
The new curtains fabric came form Calico Corners. We got it for a steal (originally $20/yard and bought it at $4/yard!) and bought too much because I couldnt remember how many & how big the kitchen windows were. Since we had a lot of fabric left over, my Nana’s working on bar stool seat cushions and a table cloth for our dining room table.
