Megan’s Mateys

Since I heard this news, its been hard not to keep this family in my thoughts. My heart just breaks for Amber & her family. Although I’m not yet a mother, I really truly feel for the situation and ask if my blog readers will add this family to your prayer list.
A fellow NC nestie, Amber, who’s almost 20 weeks pregnant, found out late last week at her most recent ultrasound that her daughter Megan Grace has a severe form of dwarfism called skeletal dysplasia which means she will be carried to term but her body will not grow enough to have room for her lungs. Amber has bravely decided to carry this baby to term & treasure each moment with Megan Grace.
Other nesties (especially those on the NC babies board) have stepped up with fundraising ideas & made this blog to keep us up-to-date & to support Amber and her family. I posted a picture & blog link on the right. Amber is a ECU grad & thus a big pirate fan. Please keep them all in your thoughts & prayers for this difficult time. God has the power to do amazing miracles! I hope He will cover Amber with his calming presence and that she will be comforted by knowing we are thinking & praying for her & Megan Grace.

Spinach Dip

I also got this recipe from Kelly’s Korner’s recipe blog. Its a lil twist on the normal spinach dip. I made it last night for a Chi O Alum event that I hosted. I think everyone enjoyed it~ there was none left at the end of the night! I made this in my mini crock-pot instead of baking/microwaving as her recipe says.
Ingredients
1 pkg frozen chopped spinach
8 oz cream cheese (used light)
8 oz monteray jack cheese (I used mozzerella because I had that already, but I think the extra spice from the jack would’ve been good)
6 oz parm cheese
1 can rotel tomatoes
Directions
Thaw spinach & drain. Add ingredients to crock pot. Served with pretzel chips & melba toast.
Kelly’s recipes says to cook spinach, add cheese & microwave (3-5 mins) until melted & liquid. Add rotel and mix.

Poppyseed Chicken

I got this recipe from Kelly’s Korner’s recipe blog (link to her regular blog on the right). I made it this weekend and husband and I both enjoyed it. We didnt have Ritz crackers so I used pretzel chips, but next time I’ll use Ritz. I halved the amount of sour cream, soup, and butter and thought there was plenty of sauce. Enjoy!
Ingredients
2-3 chicken breasts, boiled and cut into small pieces
8 oz sour cream (used light)
1 can of cream of chicken soup
approximately 2 T poppyseeds
ritz crackers crumbled
1/2 stick of butter
Directions
Mix first 4 ingredients together and put in baking dish. Cover with crushed crackers. Melt butter and pour on top. Bake 20-30 minutes at 350.

Outlander Series

I’m sad. I finished A Breath of Snow & Ashes on Sunday which is the last of the series until some time in 2010. I had dreams in Scottish Highland accents all weekend. I miss Clare, and Jamie, and Bree, and Roger and the funny Mr & Mrs Bugg and all the cute kids… I might have to read the series again before the next books come out (and each one is around 900 pages!!)
I started Handle with Care Monday (its Jodi Picoult’s new book). Its a one week library rental so I’ve gotta speed read it this week. I’ve heard its really good, but I got a box of tissues ready.
Then its back to Twilight which has to be done by Sunday 3/22. I’ve heard nothing but great things about it and think I’ll fly through it. I’m looking forward to meeting Bella & Edward.
