One week ago tonight we were on our way to my parent’s house to begin our DC trip! We planned this trip months ago when we realized around Christmas that my Dad’s parents had never toured DC and Jason had never done the touristy things there. We’d thought about trying to go in March but we’re afraid of the weather being too cold & that things getting crazy in DC around the Cherry blossom festival. My mom’s a big planner for trips~ she likes every minute to be filled with something! We decided to let those who hadn’t been to DC make the big decisions, so we played some things by ear. We’re all used to vacationing with Mom so we knew what we were in for and that we’d see a lot in a short couple of days.
We left Midlothian early Friday morning and we’re parked in front of the Washington monument by 1030! Friday before lunch, we saw the Washington Monument, WWII Memorial, Lincoln Monument, Vietnam Memorial, and Korean War Memorial. They are all right there together but we still did a lot of walking.
We’d packed sandwiches & snacks so we ate a picnic lunch on the grounds around the Washington Monument (yay for saving money!). The afternoon was spent running through the American History Museum and the Natural History Museum. If you want to do the museums speedy go to the visitor’s desk~ they have a top ten must see list! We ended the day stopping my the National Cathedral. It was really pretty inside and there was also a international flower festival going on all around there. Nana, Pawpaw & Mom checked out all of the church and the flowers inside~ I “window” shopped in the booths outside after peeking in the church. At this point we were pretty spent and piled in the Tahoe and headed to the hotel.
We found a deal ($59 a night!) for the Marriott Courtyard in Alexandria. That night we ate the best meal I’d had in a while~ I’ll recommend Carlyle to anyone and everyone! Carlyle is right off 395 at the Shirlington exit and in the Village at Shirlington. We topped the night off by playing spades in the hotel room (Nana & I lost, badly!).
Saturday we went back into DC. We started with the International Spy Museum (the only thing we spent money to see and it was only $16). It was so cool~ you assumed a spy name and had to keep it up for the beginning of the museum. It starts by “teaching” you to be a spy then goes in to the history of spying. I’d recommend this to anyone~ especially people with kids. We were there for a couple of hours and didn’t even see every little thing.
We split off after that~ Jason met up with my brother & grandfather and they went to the Nationals baseball game. Mom, Nana & I ventured into Chinatown at had lunch at Chinatown Express~ looks sketchy on the outside (and kinda on the inside too), but it was a recommendation from a coworker of my moms and turned out to be pretty good. After lunch, we went to Ford’s Theatre and then the house that Lincoln died in (which was across the street). We met back up with the boys and went to the FDR & Jefferson Memorials. Those are a little bit further away from the others~ too far to walk with a wheelchair.
Two of Jason’s groomsmen live in the Northern VA area, so we were able to meet up with them in Old Town Alexandria Saturday night. We started out with dinner at King Street Blues then the fam went back to the hotel and we made out way to Murphy’s Irish bar. Good times had by all~ maybe too many!!
We woke up Sunday to rain! It had sprinkled on and off on Friday & Saturday, but nothing to mess up our plans. Sunday it was POURING! So we scratched our plans to go to Arlington Cemetery and decided on seeing the new Air & Space Museum at Dulles.
Dad’s really into air/space & history and he really wanted to see this.
I’m so glad he suggested it so cool! Another great place for kids & adults too! We headed home after spending a couple of hours checking out all the planes.
We were starved & some of us a lil hung over so we had lunch at Eggspectations. If you are EVER near one of these fabulous restaurant GO THERE! Jason & I had been to the one in Columbia while at a wedding and we’d just talked to everyone about how great it was. We were so excited to find their newest location right on our way out of town!
We got back to Raleigh late Sunday night and this week has been pretty low key while we recover. I’ll post some pictures in another post since this one is long enough already!

SIL’s Chicken Casserole
While we were in GA about a month ago, Jason’s sister made this recipe of a big group of us. It was awesome. I got the recipe from here and hoped to make it while we were at the beach but we ended up having other things. I made it this weekend and it was so good & easy!! It made enough for us to have it Friday night then again throughout the day Saturday.
Ingredients
3-4 Chicken Breasts, cooked and chopped
1 can cream of chicken soup
8 oz sour cream
1 cup chicken broth
1.5 sleeve Ritz crackers
1/2 stick butter/marg
Directions
Cook chicken (I boiled but SIL said the best is crock potting the chicken) and cut up into bite sized pieces. Place chicken on bottom of baking dish (I used 9×11). Combine soup, sour cream & broth. Top chicken with mixed liquids. Bake for 20-30 minutes. Crumble up Ritz crackers (I only had 1/2 sleeve but would use more next time) and mix with melted butter. Top dish with cracker/butter and cook for another 10 minutes or until you think it’s done.
My SIL served with homemade mac n cheese, green beans, peas, biscuits and sweet tea~ gotta love southern cooks! We made kraft mac. 🙂 I think it would be good with rice too. On Sat we ate the leftovers without anything and it was great. Enjoy!

This is not one of “Suz’s Treats” (kinda the opposite!) but just wanted to let ya’ll know what I’ve been up to. I’ve been MIA recently while studying for a test for work. It’s officially called AIC 33. I took it this morning & passed! I need to take 6 different test like this one to be a “Sr” in my position. Three down and three to go. Now that its done, my nights and weekends are free again! I’m gonna take a couple of months off before taking the next one~ they get harder from here!
Strawberry Daiquiri Cake
My friend Brooke from work gave me this recipe a while ago because she thought it sounded like something I’d love. I remembered this receipe last night and thought I’d post it so we could make it down at the beach using fresh strawberries from Holden Farms. I can’t wait!
Strawberry Daiquiri Cake (Brooke’s friend Natasha)
Ingredients:
1 box cake mix (vanilla, yellow, strawberry) or enough gluten free cake mix to make a 2 layer or sheet cake
1 small box instant vanilla pudding
1 14 oz. can sweetened condensed milk (fat free if desired)
1 16 oz. container of Cool Whip (Lite if desired)
1 can frozen strawberry daiquiri mix, thawed
Fresh strawberries, sliced with sugar sprinkled on them (or can use 1 bag frozen strawberries, thawed & sliced with sugar). Leave some juice on them.
Red food coloring (optional)
Directions:
Mix cake as directed on package, adding small box of instant pudding. Bake cake as directed on package in 9×13 greased baking pan. Let cool 10 minutes then turn cake out onto wire rack or wax paper and allow to completely cool.
To make frosting: Stir sweetened condensed milk & daiquiri mix together. Then fold in cool whip. A drop of red food coloring may be added if desired for color (but not too much or will make frosting too runny.) If this is done before cake is ready to put together, put this mixture back in refrigerator.
Split cake into 2 thin layers using dental floss. Put the bottom half back into pan. Use fork to punch holes in cake.
Spread enough strawberries (& juice) to cover layer of cake.
Spread layer of frosting on top of strawberries.
Put top half of cake over frosting. Use fork to punch holes in cake.
Add more strawberries (if desired) then frosting on top half of cake. Can put strawberries under frosting and/or on top of frosting for decoration.
Refrigerate. (Frosting will set up a little more once refrigerated.)
Beach Weekend Reads
So I’m heading to OIB for the first of hopefully many trips this spring & summer. My favorite thing to do at the beach is read. It kinda drives my mom crazy since her favorite thing to do on the beach is talk! I have four books set aside for 3 days off. Ha! I started Breaking Dawn tonight (its the fourth & last of the Twilight series). I’m also bringing Marley & Me (which is the April XO Alum selection & its perfect to hide tears with big sunglasses), Election (May nestie book club selection), and Multiple Bles8ings (probably kinda cheesy but I love the show & thought it’d be a good beach read). I can’t wait!! Anyone reading this read any of those books? Have any favorite beach reads?
