Valentine’s Dinner Chicken Bruschetta Bake

We decided to avoid the crowds & expense that going out on Valentine’s Day entails. I bought chicken on sale at Lowes Foods and wanted to make this recipe. We also did a Caeser Lite bag salad & used TJ’s Garlic & Herb pizza dough to make breadsticks. Oh and I picked up a bottle of Kitchen Sink white wine at Total Wine. It was a very yummy nice Valentine’s Day dinner! We also got Wal-E from red box. We’d not seen it yet & loved it!

Bruschette Chicken Bake
Ingredients
1 can diced tomatoes, undrained
1 package Stove Top Stuffing Mix for Chicken
1/2 c water
1/4 tsp garlic powder (orginial recipe called for 2 cloves garlic mined)
1-1.5 lb boneless skinless chicken breasts, cut into bite-sized pieces
1 tsp dried basil
1 c mozzarella cheese (used 2% milk shredded)
Directions
Mix tomatoes, stuffing mix, water & garlic powder in bowl just until stuffing mix is moistened.
Layer chicken, basil, and cheese in 9×13 baking dish.
Top with stuffing (and a little more cheese if you want).
Bake 30 min or until chicken done.

Crockpot Salsa Chicken

I found this recipe on Stephanie Cooks and thought it sounded like something Jason & I would enjoy. I was spending today de-Christmasing our house so I was able to keep checking on it and stirring it.

Ingredients
4 frozen chicken breasts
1 packet taco seasoning
1 can reduced fat cream of chicken soup
1 c salsa
1/2 c sour cream
shredded cheddar cheese

Directions
Place chicken at the bottom of your crockpot. Sprinkle taco seasoning on top of the chicken. Mix the soup and salsa. Spread over the chicken. Cook for 6-8 hours on low. Top with sour cream and continue heating until it’s hot. Sprinkle with cheddar cheese.
I served it over rice. I think Stephanie served it in tacos.

Crockpot Chicken Stuffing

My friend Brooke at work made this last weekend and said she knew we would love it too. It’s in the crockpot now! So I’ll update later with pictures and yumminess info! UPDATE: It was awesome! We ate it after 7 hours, but I think 6 was probably enough to make it delicious. We’ll definitely make it again and maybe add more cranberries next time.

Ingredients
4 chicken breast

1 can of cream of chicken/cream of celery or cream of mushroom soup (I used cream of mushroom)
1/3 cup of milk
1 package of stove top
1 2/3 cup of water
1/2 to 3/4 cup of dried cranberries
Directions
Place chicken breast on the bottom of crockpot. Mix creamed soup with milk and pour on top of chicken breast. Mix stove top with seasoning package, water and cranberries and pour on top of chicken and soup. Cook on low for 6 to 8 hours.

Mom’s White Bean Chicken Chili

So I saw Jenni’s post about chicken chili and it sounded so good that I emailed it to a friend about me making it for our small group on Monday night. She reminded me that my mom makes a killer white bean chicken chili too and asked for that recipe. She remembered it included beer which we both thought was fun! So to remind myself of the recipe and to share it with the world here goes. BTW I think I’m going to combine Jenni & Mom’s recipes for Monday. Hope they turn out well. I’ll share pictures later. Oh and I’m going to try out the Oatmeal/PB cookies a few posts down Monday too!
Ingredients
1+lb of cubed chicken
48oz Great Northern beans
16 oz salsa of your choice
2 c of chicken broth (up to 2 cans ok)
1 can beer
2 tsp cumin
2 tsp garlic powder
4 oz (small) can of green chilis
15oz can sweet corn, drained
1 c monteray jack cheese
Directions
Combine all ingredients. I plan on crockpotting them all day. Use about 2/3 of cheese in mix and top your bowls with the rest.
I’m planning on also adding oregano, cayenne pepper, & flour like Jenni did and also adding a bit of sour cream on top with the cheese.

Chicken Enchilada Casserole

This is a blend of a yahoo foods recipe, the back of the Old El Paso enchilada dinner kit, and what was in our pantry!
Ingredients
1 lb chicken
Old El Paso seasoning mix
flour tortillas
enchilada sauce
about 2 cups of cheddar cheese
1 can black beans
1 cup salsa

Directions
Preheat oven to 350.
Cut chicken in bite sized pieces, saute then add 1/2 cup water and Old El Paso seasoning mix. continue cooking on medium-high for 4-8 minutes.
Mix chicken, 1 cup cheese, 1 of the enchilada sauce packets, rinsed & drained black beans in seperate bowl.
In ungreased 11×7 pan place tortilla halved on the bottom. Top with some of the other enchilada sauce then 1/2 of the chicken mix. Add another layer of tortillas. Top with salsa & some cheese. Add layer of tortillas. Top with other half of chicken mix. Add layer of tortillas. Top with salsa & cheese. (This is kinda however you want.)
Bake on 350 for about 30 minutes. If desired, served with sour cream, diced red peppers, green onions.
The yahoo & Old El Paso recipe called for onions sauteed with the chicken but we didn’t have any & don’t really like them. The yahoo recipe adds rice & the El Old Paso recipe adds sour cream in with the chicken/cheese/black beans mixture. Sadly we didn’t have either on hand, but I might try that for next time.
