year ago tonight…

It’s one year ago tonight we were at the rehearsal dinner then we went to Giggling Mackerel on OIB. That was an awesome night ~ hanging out with out of town family and friends.Jason starts a new job tomorrow in the field that he’s been going to school for and we’re so excited! Bad part is that he also has class tomorrow night so I won’t see him at all on our anniversary. 🙁
We made dinner tonight for a little celebration and hope to go out to dinner to celebrate once he gets paid 🙂 My parents were in town this weekend for the NCSU game (I won’t even go there about how horrible both the game & the rain were!). My mom and I shopped some Saturday then went to church and to the farmers market today. We picked up tomatoes and sweet potatoes. The tomato we cut up for sandwiches and also in a dinner salad. We baked the sweet potatoes for dinner and they were awesome! I really don’t know why I’d never been to the farmers market before! Oh and we picked up fresh banana pudding from the restaurant. Oh wow~ it was amazing!

Go Pack!


Go Pack! I’m so glad its football season again! This weekend a bunch of my college girls and their significant others came in town for the game & tailgating. We had so much fun! And to make it even better, NCSU WON!! Will add pictures soon of the good times 🙂

Carolina Caviar

My mom & I made this over July 4th weekend. So I got the recipe from her to make for tailgating this weekend. Thought I’d share with the world since I had a hard time finding the recipe online. Here’s my mom’s recipe:
Ingredients
1 can of black beans
2 cans of black eyed peas
1 can of Mexi-corn
1 packet of taco seasoning
1 small can chopped green chillies
chop up tomato, red & green peppers & onions
approximately 1 cup Italian Dressing
Dash of Tabasco (optional)
Directions
Drain & Rise the first 3 ingredients. Mix all the above together. Best if it sits/marinates over night. Serve with scoops.

I omitted the onions (not a big fan), used corn with red & green peppers so I didn’t add fresh ones. I couldn’t find a can of green chillis so I bought & used 2 small cans of Rotel Tomatoes with green chillies. I’ll add photos later.

Toll House Chocolate Chip Cookies

I was looking for a cookie recipe to take to a Chi O recruitment alum/active event tomorrow night & for tailgating Saturday. I thought I’d go with a “basic” recipe since Jason wasn’t a huge fan of my apple/oatmeal/choc chip cookies. I found this in a coworker’s Oxford Baptist Church recipe book but it was also on the back of the semi-sweet chips I used.

Ingredients
2 c + 4 Tbsp four
1 tsp. baking soda
1 tsp. salt
1 c butter
3/4 c sugar
3/4 c brown sugar
1 tsp vanilla
1/2 tsp water
2 eggs
12 oz chocolate chips (I used more like 6 oz b/c I’d used the other 6 oz on the cookies last week & I’m not a huge chocolate fan)

Directions
Sift together flour, baking soda & salt; set aside. Combine butter, sugar, brown sugar, vanilla & water. Beat until creamy. Beat in eggs one at a time. Add four mixture & mix well. Stir in chocolate chips. Drop by 1/2 spoonful onto greased cookie sheets. Bake at 375 degrees for 9-11 minutes.
