New Job

I started a new position within the same company on Aug 3rd. This kinda makes up for my lack of posting I hope! I’ve moved from claims to underwriting and I’m loving the change. I’m a couple weeks into training but will have at least a few more weeks in auto training and then moving on to learning “fire lines.” Yay for changes!

Jason Passed!

Jason’s been studying for the past 3 weekends for this IT/Networking test which he took today & passed!! We’re so excited! We went out to dinner tonight to Longhorn to celebrate. 🙂

Jane’s Cheeseball

We’d first also chosen this cheeseball to be on our party food list. While shopping yesterday we decided that we had enough food & cheesy items and cut this from the list. But I wanted to post the recipe because it’s probably the only cheese ball I’ve ever loved.
Ingredients
8 oz sharp cheese
8 oz cream cheese
1/2 c mayo
dash of Worcestershire
dash of red pepper
dash of lemon juice
dash of onion salt or seasoning salt
Ritz crackers
Directions
Grate cheese & mix in cream cheese. Mix the other ingredients. Form into a ball. You can roll in nuts at the point if you desired. Chill in freezer. Take out of freezer about 2 hours before you serve with Ritz crackers.

Layered Balck Bean Dip

Not trying to spoil ya’ll too much, but Beth’s new blog & daily blog posts as inspired me! While going through recipes & pictures recently I realized I hadn’t posted this easy taco layered dip recipe.
Ingredients
1 package of cream cheese, softened
1 can black beans, drained & rinsed
1 can rotel diced tomatoes & green chilies, drained
1 c mexican style shredded cheese
Directions
Spread cream cheese onto bottom of shallow dish (used 9 in pie pan). Layer with beans then tomatoes then cheese. Serve with tortilla chips. Found this in Kraft Foods magazine & it says ingredients can all be mixed together & served that way as well. But I think the layered looks nicer.

Engagement Party Food & Drink Recipes

If I’ve been MIA recently, its because I’ve been on a house cleaning rampage for the engagement party at our house this Saturday night. Its being given by Jason & I (MoH), Beth (the MaidoH), and (another) Beth (BM) & her husband Dave. We’ve been working really hard to make this a success. Here’s the food list & recipes if they’re not already in the blog. I’ll post pictures of the event later on.

Veggie tray (cherry tomatoes, broccoli, baby carrots, celery) with Salsa Ranch Dip (3/4 cup chunky salsa, 16 oz sour cream, & package of ranch dip mix)

Buffalo Chicken Dip with scoops
3/4 cup buffalo sauce (I use Texas Pete Buffalo Sauce)
1.5 c ranch dressing
2 small cans or 1 large can of chicken
2 cups fancy shredded cheddar cheese (the thinner shredded melts easier)
12 oz cream cheese (low fat or fat free ok)
Mix all items together & bake at 350 for 30 mins (stirring couple times) or mix in crock pot.

Turkey Roll Ups
2 pkg crescent rolls
1 lb turkey sliced thin
spinach
garlic & herb alouette cheese spread
Flatten out crecent rolls, top with alouette spread, layer with spinch, top with turkey. Roll it all up. Cut into 1/2 inch or so slices (like cut & bake cookies). Place on baking sheet. Bake on 350 for 15 min or until crescent rolls golden brown.

Spinach Artichoke Squares

Baked Brie
wedge of Brie
1 pkg of crescent rolls
1 small jar of raspberry jam
1 small package of chopped walnuts
Roll out crescent rolls, place Brie on crescent roll, cover cheese with crescent roll. Brush little bit of melted butter over top & bake on 350 until crescent rolls golden brown (15 min or so). Top with raspberry jam & walnuts

Mom’s Meatballs
frozen meatballs
Place meatballs in large crockpot. Cover with these items using the following ratio. I think I usually tripple.
3 oz grape jelly
12 oz Heinz Chili Sauce
2 tbsp lemon juice

Poppy Seed Ham Rolls/Biscuits
3 packages of small rolls or biscuits (Pepperidge Farm)
3/4 pound of Swiss cheese
1.5 pounds of ham, very thinly sliced
2 sticks of butter
1 small onion
1 tsp Worchestershire Sauce
3 tsp mustard (I use brown mustard)
3 tbsp poppy seeds
Directions
Chop onion into very small pieces. In skillet melt the butter. Add onion, mustard & poppy seeds. Continue cooking until the onions are translucent & the sauce thickens.
Slice the rolls through the middle (easiest if you keep them connected). If you use biscuits, just open them up. Spreadthe sauce on the bottom. Top with ham then swiss cheese. Cover with any remaining sauce. Cover with top of roll. Can also brush sauce on top of rolls.
Wrap tightly in aluminum foil. Bake at 350 for 20 minutes.

Costco Cake

Beth’s Diana’s punch
1 fifth Southern Comfort
1 can frozen limade
1 large can pineapple juice
1 bottle cranberry juice
2 quarts of champagne (or 7 up)
Serve chilled & garnish with orange slices

Red & White Wine, Bud Select, Miller Lite, Saranac Summer Mix, & Sam Adams Summer Mix
