Jennandtonica’s Cheesy Sun Dried Tomato Bagels

The awesome Jennandtonica has made these twice for our Tacky Christmas Sweater Party. I was thought they’d be good to try with my family at the beach & she twittered me the recipe. I love the recipe~ not too many ingredients, quick & easy to make & oh so delicious!

Ingredients
3 Thomas 100% whole wheat Bagel Thins (Jenny’s used whole wheat mini bagels)
about 1 cup Italian 5 white cheese mix
about 1/2 cup light mayo
Julian Sun Dried Tomatoes sliced (Jenny uses TJ’s. We just got what Lowe’s had)

Directions
Turn on oven to broiler setting.
Split bagels & place on baking sheet.
If not precut, slice sun dried tomatoes.
Mix cheese with just enough mayo to make it stick together.
Top bagels with cheese mixture.
Add sun dried tomatoes to top of bagels.
Bake bagels until cheesy melted & bagels browned.

We quartered bagels into bite sized pieces. Everyone loved them just as I had when I’d had Jenny’s verison!
The bagels weren’t super crispy for us though. Not us if its because we sprayed the pan with pam or not cooked bagel enough. Jason suggested that we could try broiling bagel for a minute next time before topping. Might try that next time.

Rotel Spinach Dip

tMy recipe is a take on Kelly’s listed on her recipe blog. I thought I had already posted this, but realized not when I searched my blog before making it tonight.
Ingredients
1 can Rotel
1 package frozen chopped spinach, thawed & drained
8 oz 1/3 fat cream cheese
about 1 cup mozz cheese
parm cheese (I just shook some out after reading that Kelly’s recipe used it also)

I put everything in my mini crockpot and cooked until warm & melted. We served with scoops.

Crescent Wrapped Raspberry Gouda

Mom pulled out this new recipe last weekend. It was a big hit with out family so I thought I’d share. Its a little twist to the standard Baked Brie appetizer.
Ingredients
1 can Pillsbury crescent rolls
1 round (we used wedge) Gouda cheese (we also removed the wax coating)
1 tablespoon raspberry preserves (we just spooned enough to cover cheese, maybe little more than one tablespoon)
1/4 cup toasted sliced almonds (we omitted)
1 egg, beaten (we omitted)
fresh raspberries and apple slices
Directions
Heat oven to 350. Unroll crescent rolls and press perforations to seal. Set cheese in middle of crescent on a cookie sheet. Original recipe calls to divide crescents in half placing cheese on middle of one half.
Spread preserves on top of cheese. Sprinkle with almonds. If divided crescent in half, cover cheese with second half and press dough evenly over tog edges to seal. If place cheese in middle (which we did), pull dough up and over cheese and press to make sure completely covered.
Can top with beaten egg and additional teaspoon of almonds if desired. Bake 20 to 24 mintues or until golden brown. Cool 5 minutes. Serve warm with raspberries and apple slices. We also used crackers to scoop up the yummy goodness!

Cranberry Feta Pinwheels

Two weeks ago at Chi O Alum dinner club the hostess, Lauren, made these for her Fall Favorite theme. They were so awesome that we requested the recipe! Beth made them for the party last night and they were a hit again! I hope to make them soon~ maybe for dinner?! or as a Thanksgiving weekend appetizer.

Cranberry Feta Pinwheels Recipe:

1 (6 ounce) package sweetened dried cranberries (chopped)

1 (250 g) container spreadable cream cheese

1 cup crumbled feta cheese

1/4 cup chopped green onions

4 large flour tortillas or wheat flour tortillas

chopped nuts (used about 1/2 cup chopped walnuts)

*Lauren & Beth also added some deli turkey meat, after the filling is made she just put some turkey slices on top before rolling them up*

Directions:

1. Combine all ingredients except tortillas (and turkey), mix well.

2. Divide and spread mixture evenly among tortillas.

3. Roll up tightly, wrap in plastic and refrigerate at least one hour.

4. To serve cut into 12 slices.

Jane’s Cheeseball

We’d first also chosen this cheeseball to be on our party food list. While shopping yesterday we decided that we had enough food & cheesy items and cut this from the list. But I wanted to post the recipe because it’s probably the only cheese ball I’ve ever loved.
Ingredients
8 oz sharp cheese
8 oz cream cheese
1/2 c mayo
dash of Worcestershire
dash of red pepper
dash of lemon juice
dash of onion salt or seasoning salt
Ritz crackers
Directions
Grate cheese & mix in cream cheese. Mix the other ingredients. Form into a ball. You can roll in nuts at the point if you desired. Chill in freezer. Take out of freezer about 2 hours before you serve with Ritz crackers.
