Heathly Banana Bread

If yall don’t know by now, I love bananas & I love sweets! This recipe incorporates both = perfect!! I found this recipe on Elissa’s blog. I thought I’d post it here to remind myself of the ingredient & directions so we could make it this week or weekend. I’ll probably half it though. Thanks for another yummy recipe Elissa!

Low Fat Banana Nut Bread
Ingreidents
7 ripe bananas, mashed
1/2 c unsweetened apple sauce
2.5 c unbleached all purpose flour
1.5 tsp baking soda
1/2 tsp salt
4 tbsp butter, softened
1 c light brown sugar
4 egg whites
1 tsp vanilla
3/4 chopped walnuts (optional)
baking spray

Directions
Preheat oven to 325. Grease 2 9×5 loaf pans with spray.
In medium bowl, combine flour, baking soda & salt with a wire whisk. Set aside.
In a large bowl, cream butter & sugar with electric mixer. Add egg whites, bananas, apple sauce & vanilla. Beat at medium speed until thick.
Scrape down the sides of the bowl. Add flour mixture & walnuts then blend at low speed until combined. Do not over mix.
Pour into loaf pans & bake on the center rack for 60 minutes, or until toothpick comes out clean.
Let pan cool at least 20 minutes. Recipe says bread should be room temperature before slicing (I see this being a hard step for me to follow!!)

Servings: 26 slices (2 loaves). With nuts: calories 129.2 fat: 4.4g protein: 2.8 fiber: 1.4g WW points: 3. Without nuts: calories: 106.1 fat: 2.1g carbs: 20.2 protein: 2.3, fiber: 1.2g WW points:2.

Scratch Blueberry Muffins

I was planning to make these blueberry muffins on Saturday morning, but I realized when I went into the pantry that we did not have the necessary pudding mix. After a little internet searching, I found a recipe on recipzaar where we had all the ingredients on hand. It seemed easy & pretty quick & yet tasty!Jason doesn’t love toppings on muffins, so we omitted those. They weren’t quite as sweet without it, so I added sprinkles of sugar on top then microwaved when I ate leftovers on Sunday.


Ingredients
1 stick butter, softened
1 c sugar
2 eggs
1 t vanilla
2 t baking powder
1/4 t salt
2.5 c blueberries (I might reduce to 2 c next time~ they were really blueberry filled)
2 c flour
1/2 c milk

Directions
Preheat oven to 350. Mix butter until creamy. Add sugar & beat until fluffy. (I used our KitchenAid mixer, but hand mixer would’ve worked.) Add eggs one at a time, beating after each. Beat in vanilla, baking powder & salt. With spoon, fold in half the flour & then half the milk. Repeat.
Fold in the berries. Spoon into greased muffin pans. Bake for 20-30 minutes. My dark pan took around 25; the silicone pan a little less than 30.

Cinnamon Oatmeal Muffins

I found this recipe on Stephanie Cooks. We had all the ingredients on hand including a bunch of instant oatmeal I’d gotten with Harris Teeter triples a while back. I used a combination of lower sugar cinnamon oatmeal, lower sugar apple & cinnamon, & regular apple & cinnamon instant oatmeal. I believe Stephanie’s made 12 mini muffins, but I don’t have a mini pan. Mine made 6 regular sized muffins that we’re looking forward to enjoying for dessert & breakfast tomorrow!

Ingredients
5 packets of instant oatmeal
1/3 cup flour
1 tsp baking powder
2 eggs
1/4 cup oil (she called for canola I only had olive & vegetable so I used vegetable)

Directions
Preheat oven to 350.
Mix all ingredients in mixing bowl.
Divide mixture into muffin pan.
Bake for 15-20 minutes.

Banana Bread Muffins

Thanks to my new twittering obsession, I found out that Alethea was making these today. She linked the recipe from allrecipes.com. Jason & I both love banana bread & we had 3 old bananas that either needed to be thrown out or turned into something yummy! I changed a few little things based on comments from other people.
Sarah’s Banana Bread Muffins
Ingredients
1 c white sugar
1 egg
1/2 c vegetable oil
3 ripe bananas
1/4 c chopped walnuts
1/2 t vanilla
pinch cinnamon
1 t baking soda
2 c flour
1/2 t salt

Directions
Preheat oven to 350. Place muffin cups or grease muffin pan.
Mix sugar, oil & egg until creamy & light yellow. Add vanilla, mashed bananas, walnuts. Add flour, cinnamon, baking soda, and salt. Mix until combined & smooth. Spoon batter into muffin cups. Allrecipes said would make 12. I made 19. 🙂
Recipe said bake for 30-40 mins. I took out at 25 and I think they were perfect~ fork put into muffin came out clean.

Cinnamon Chocolate Chip Monkey Bread

The recipe calls it “Breakfast Ring” but I’ve always heard it as Monkey Bread or Pull-Apart bread. However you call it~ its yummy!! My friend Kara made this last Saturday for our homecoming tailgate. It’s one of their favorite family recipes and I think now it’ll be one of mine! I’m planning to make this recipe again over Thanksgiving weekend. She used raisins instead of chocolate chips. I didn’t have any raisins so I used chocolate chips.
Ingredients:

1/2 cup butter or margarine, softened
2 cans (12.4 oz. each) refrigerated cinnamon rolls with icing
1 pkg (4-serving size) vanilla pudding and pie filling mix (not instant)
1/2 cup firmly packed brown sugar
1/4 cup miniature semisweet chocolate chips
1. Heat oven to 375. Using 1 Tbsp of the butter, generously butter 12-cup fluted tube pan. In small microwavable bowl, place remaining butter (I separated into two to make it easier to divide in over the layers). Microwave uncovered on High 1 minute, or until melted when stirred.
2. Cut each cinnamon roll in half crosswise. Place half of roll pieces in pan. (Mom’s Tip: Make sure the pieces are facing in the same direction.) Sprinkle with half of the pudding mix and half of the brown sugar. Drizzle with half of the melted butter. Repeat with remaining roll pieces, pudding mix, brown sugar and melted butter. Sprinkle with chocolate chips. (Kara used raisins on both layers, instead of chocolate chips.)
3. Bake 24-28 minutes or until rolls are deep golden brown and dough appears done when slightly pulled apart. Cool in pan 2 minutes. Turn upside down onto serving platter. Cool 15 minutes. Microwave icing uncovered on High 10 seconds to soften. Drizzle over ring. Cut into wedges to serve.
