Stepping out Saturday…8 days late

I’ve meaning to join Mandy & friends for Steppin’ Out Saturdays for a couple of weeks now. But can’t really post a fun outfit post if you’re being lazy & leaving the house or if you’re with grandparents & don’t take any photos. Lucky for yall (maybe?), I have friends with cameras. Kelly sent me to photos tonight from last Saturday’s NCSU game. {Friends on twitter might remember me from this evening. I had a VERY good time at the game.} That said, excuse the squinty eyes… I waived between showing the worst {the best?!} and decided to do a little of both for your viewing pleasure! I think you’ll be able to tell who was my drinking buddies & who was the awesome, amazing DD!


Btw, these are all before & during game…not after or once I got home & continued drinking… 🙂 Oh, & I could NOT resist this fabulous middle shot of random man rockin’ out in his poker shirt. Really what was he thinking?!

Still TTC..

I was going to say TTC cycle 10 then I thought wait, wasn’t it 9? 8? Is it bad I’ve lost count?! We’re now on day 17 of cycle 10 & I realized I hadn’t posted the chart from cycle 9 yet. Is anyone still paying attention to these charts? At this point, I’m posting them so I can keep track too.


So cycle 9, I tried it all~ prenatal vitamins, 100 mg vitamin B-6 daily, green tea until O date, POM all cycle, pineapple core during days 5-8 (without eating the rest~ waste of a good pineapple I say!). Only wivestale/thebump recommended thing we aren’t doing is PreSeed. We weren’t fans. Well all that said, it didn’t help.

I was so excited with the CD7 dip (implantation dip anyone?!) that I POAS before we went to the NCSU/FSU game. It was negative. I drank & had a great time at the game. I was then elated when temp went back up on CD8. I was busy in CLT with my Papa’s surgery when the temps went down & spotting began… But on the upside, I’m thinking that some might have worked. {tmi alert… oh wait isn’t this whole post tmi?!} My CM was more pronouced than some prior months (thanks Lipton diet green tea?), I lasted to cd11 (thanks B-6?) and my last 2 periods heavier than normal (thanks POM?).

It seems like somethings been in the twitter water recently, so maybe it’ll get sent our way soon.

Is there anything better…

than a girls’ night?! I was feeling like I needed one recently. Not really for any particular reason; just wanted to hang out & catch up with women. That wine & yummy snacks often go along with girls’ nights doesn’t hurt either! Awesomely, I’ve had girls’ nights the last two nights in a row!

Thursday night was bunco with my Chi O alum sisters. There were 13 of us {probably the most ever} which was great because we were able to have four tables then as a few people left, we were still able to have three pretty full tables. Janie, our hostess with the mostest, made fabulous appetizers & wine was flowing. I enjoyed catching up with old & new friends & even came home with $3 more dollars than I went with thanks to being the “biggest loser”. 🙂

Tonight my friend Elissa {another great hostess} invited a group over for a Mary Kay party. I didn’t need make up, but love her & wanted to catch up with her & our friend Marie. I also was able to try some of their products including this microderm abrasion treatment which I’m liking more & more as the evenings gone on. My face feels so smooth! I might have to put that on a wish list. Can’t wait to do lunch with those ladies soon!

Tomorrow is the last home NCSU football game. It’s also Homecoming so the NCSU Chi O alum are doing a tailgate. Some of them are actually meeting 8 hrs from now. Clearly I won’t be making that early group, but we plan to be out there by 11 for the 2p game. I plan to join Mandy’s SOS (stepping out Saturday) & combine that with football post complete with photos & recipes afterwards!

Pepper Jack Chicken

I subscribed to Mable’s Meals over the summer for free thanks to some blog post with the discount coupon. It’s a weekly email with about a week’s worth of meals. There tend to be a lot of pork/beef meals which I don’t eat/cook, but recently the author’s husband became a vegetarian so I’ve noticed more & more vegetarian friendly recipes. 🙂 While they usually look good & easy, this is the first recipe I’ve made. But I’m tried of our normal go-to meals so we’re trying new things this week. I’m actually planning to make shrimp tacos (frozen fried shrimp, tortillas, pepper jack/cheddar cheese, lettuce, ranch dressing, & pico de gallo salsa) from this same weeks meal plan tomorrow night.

We served this with sweet potato fries. I think they worked fine but could also be great with green veggies or corn as the recipe recommends. Our only complaint: the rice was really dry/crunchy/hard. I think I might add some water to the rice mixture or add more cheese next time. Any other suggestions?Pepper Jack Chicken
Ingredients
boneless, skinless chicken breasts (I used 6 small breasts)
1 can cream of celery soup
1 can cream of mushroom soup
3 c instant brown rice
pepper jack cheese (recipe calls for 1 pkg of sliced; I used about 1 c of shredded colby jack)

Directions
Preheat oven to 350F.
In 9×13 dish, mix together the soup & the rice and spread across the bottom of the dish.
Top rice with the chicken breasts.
Cover with aluminum foil & bake for 35 mins.
Remove from oven & add layer of cheese over entire dish. Bake uncovered add’l 15 minutes or until cheese melted & bubbly. Enjoy!

Sweet Potato Fries

Thanks to The Pursuit of Happiness, I found this recipe for spicy sweet potato fries today in my google reader box. It came in perfect time because we had three sweet potatoes (thanks to Alethea!) that needed to be eaten. Hopefully they will go great with the chicken casserole we’re having tonight (I’ll blog about that in a minute). She didn’t list exact amounts which yall know makes me nervous, but I’m feeling brave! I’ll list what I did/use. Feel free to check out Lisa’s post to see exactly what she did.

Spicy Sweet Potato Fries
Ingredients
sweet potatoes (I had two small sweet potatoes & one skinny purple sweet potato)
extra virgin olive oil
garlic salt
ground white pepper
ground (cayenne) roasted red pepper

Directions
Wash & thinly slice potatoes.
Pour potato strips into a large bowl. Lightly coat with olive oil.
Mix spices in a small bowl. Lightly dust strips. {To do this I poured it over the potatoes & then shook up the bowl.}
Line baking sheet with foil & spread potatoes onto pan.
Bake for 15-20 minutes or until soft & golden brown.
