Baby shower recipes

So a couple yummy food items stood out from Saturday’s shower. The pink/red punch, the garlic hummus, & the fruit dip. 

B used Macaroni & Cheesecake’s punch recipe: one carton of pineapple orange juice to half a bottle of grenadine. They left out the fruit but I think floating frozen pineapple slices would have been fun. I also think rum or champagne could be added for even more fun!

The hummus might be the easiest to share with y’all. Trader Joe’s basic Garlic Hummus. It was so good with pretzels & B’s slightly overdone baked pitas. 🙂

I quizzed Ashley for her toffee fruit dip recipe while the shower was going around us. I found a hidden recipe file Monday & realized I’d already saved this dip for future use. So that I {& y’all} will really remember it, here’s my noted recipe.

Ingredients
1/4 c sugar
1/4 c brown sugar
8 oz cream cheese
1/2 bag toffee chips

Directions
Mix together. The recipe {& Ashley} said you can add vanilla as well {maybe 1/2 tsp}. Depending on your taste, you can add more or less sugar. My recipe says serve with apples, but at the shower it worked well with strawberries too.

A Whale of a Baby Shower

I was thrilled to be included in my friend & Chi O sister Kim’s baby shower in Charlotte this past Saturday. Beautiful Kim is happily awaiting the arrival of baby Jack in November after going through infertility herself. I’m so happy for her.

B, along with Sarah & Ashley, were the hostesses and matched Kim’s blue & red whale nursery theme with their shower decor. Kim’s mom, mother-in-law, sister, friends & neighbors {& Jack’s BFF-to-be Liam} enjoyed chatting & cake while Kim opened her gifts. I loved her comments & excited expressions. Kim's Shower Gifts

I loved celebrating Kim & catching up with my college friends with the uptown Charlotte skyline in the background. Great job hostesses. Congrats Kim! Can’t wait to meet Jack & see all your gifts in action soon.

Another Week…

Another Project 365. Thirty-two weeks in & still going!

Day 225: Saturday night we grabbed dinner at Chow after running a few errands. Yay unplanned date night out. Chow

Day 226: Sunday I grocery shopped saving over $30 with coupons. I came home pumped & excited to cook for once, so I made Cheez It Chicken. Cheez It Chicken

Day 227: I met Courtney from Sullivan & Sawyer while at BlogHer. We made the connection that I’d won a giveaway from her but thanks to mail fails, I’d never received the burp cloths. She so sweetly sent me not one but four of them in prints I just love. Sullivan & Sawyer Burp Cloths

Day 228: Tuesday I pulled out the Koko bag that had been the HWTM swag bag. My coworkers thought it was a purse & were even more impressed it was a lunch bag. I love that it fits on my shoulder & kept everything cold until lunch time. KOKO Jenn lunch bag

Day 229: Wednesday night we sadly celebrated my coworker friend Eileen’s last week working with us with a happy hour at Lynnwood.

Day 230: Thursday morning’s RE appointment revealed two mature follicles. Thursday night meant Ovridrel & prompted this tmi TTC post. I didn’t take any photos.

Day 231: I took off my Essie polish & applied the Opi’s In The Spotlight Pink {also HWTM swag}. I love the clear but very subtly pink color. What was your best part of the week? Did you take any photos?

Every night I think through my day to unwind right before I fall asleep. Thursday night, I wrote two blog posts in my head. Good ones; they were witty, entertaining, deep & even a little TMI about TTC {at least I thought they were}. I *almost* jumped up to write them down. Instead I rolled over & fell asleep. I woke up Friday morning refreshed, but my mind was blank. Those witty posts poof; gone. But I still feel like this needs to be said. To be remembered by me & to let others TTC know they aren’t alone. Mom & Dad, if you’ve stumbled back here, stop reading.

Long time readers of a certain friend of mine will remember a guest post by our friend Jenny aka the Oral Goddess. I read the post. Tongue in cheek. Admiring her willingness to not only do that frequently but also admit it & put it out there. But all the while, thinking to myself, that’s not me. Not us. At least not anymore. I kinda felt like that bedroom action was done or, like late night pizza & drunk dials, a kinda fun but rare occurrence for my 28 year old self.

Then we started TTC. And all my thoughts, plans, lofty ideas about “normal” soon went out the window. Months & cycles went by & we were still not pregnant. Our normal wasn’t working & I was willing to try *just about* everything. Which included digging deep into my seventeen-year-old-self’s Cosmo knowledge. You remember reading that right? & laughing with friends at the beach while reading articles about positions & tips & tricks that you didn’t really think people did.

Six months into trying to conceive, I was frustrated & tired. So I tried something a few of those different things & it worked. Hands, tongues, removing all married-people-don’t-do-that’s from my psyche, & pulling out the honeymoon {one size too small} lingerie, & TTC became a little more fun.

Close to a year later, the routine is killing us both. Add to that uncomfort & even pain on my part, thanks to the increased fertility meds, & TTC is much less fun & much more like our second jobs. What Jenny did {does?!}, that I kinda scoffed at, that type of performance occurs multiple times during TTC week in our house & is now our normal. But we try to have fun. & relax because, you know, that’s all it takes right?! And certain fairly tame swag that should & does make me blush a little, just might help & be my new favorite {thanks, A for picking up an extra one & sharing}.

I was told at my cycle day 10 appointment that this sixth medicated cycle will probably be the last before we add in procedures like IUIs or IVF. Both mean conception most likely occurs outside of the bedroom & with a high $$$ price. So this weekend, I’m going to try to enjoy our new normal & then let nature & God take over. What’s a better place for inception to really happen than right before attending a baby shower right?!

I’ve been thinking that I’d love a place {outside of those message boards} to connect & vent & relate to others TTC, battling infertility, or who’ve come through it with a babe in tow. I’m thinking of making fridays Infertile Fridays around here. Feel free to link up in the comments anything that might help me or others struggling through TTC.

Cheez-it Chicken

I saw this or a similar recipe online somewhere at some point kind of recently {how’s that for specific?!}. Of course Sunday night when I went to start cooking, I couldn’t find it. Thanks to pinterest & it’s search function, I found this blog post. I altered the recipe some, so I’m posting what I did.

Cheez It Chicken

Ingredients

1 1/3 c cheez its, crushed

chicken breasts, boneless skinless & cut into strips

honey mustard

non-stick spray

Directions

Preheat oven to 475. Place aluminum foil in lipped baking pan. Spray it with non-stick spray {I skipped this & regretted it}.

Place crackers in a bowl & smash them as much as possible.

Squirt out honey mustard into another bowl. I didn’t measure & added more as needed.

Coat chicken with honey mustard then crackers. This is messy but easiest if you just use your hands. Repeat for each strip, placing them on the pan afterwards.

Spray chicken with non-stick spray. Cook for 15-20 mins, flipping once, or until golden brown.

My husband’s paranoid of raw chicken. We cooked 20 minutes & as you can see some of the bigger cheez-it pieces were burnt. I dipped mine into BBQ sauce & ketchup {I’m like a two year old that loves to dip}. I liked it plain or with BBQ sauce. I think the internet also recommended dipping in honey mustard.

We started with veggies & chips with Wholly Guacamole {thanks BlogHer coupons} & then I served the chicken with Spanish rice since that’s what was in the pantry. It was a great, easy but still kinda-made-from-scratch meal.
