Chicken Spaghetti

When I told Beth that I’d bring them dinner once they got home and settled with baby Reagan, I knew exactly what recipe I’d try: Pioneer Woman’s Chicken Spaghetti. It’d been flagged in my cookbook since the day it arrived on my doorstep. My mom has similar recipes & combined PW’s with her own & warned me it made a lot of food. So as a heads up to you, make this dish with friends or a freezer in mind.

I’m going to list exactly what I did which was a little different than the fabulous PW. Only because I’m a little lazy and I don’t do whole chickens.

Ingredients
1 rotisserie chicken, deskinned, pulled off the bone & chopped by your husband {he rocks & he’s all mine}
box of chicken stock
1 lb thin spaghetti, broken into pieces
4 oz jar diced pimientos, drained
1 small onion {we don’t love onions & my medium-small one was too much for us}
1/4 c finely diced green bell pepper
2 can cream of mushroom soup
grated cheddar cheese {I used a whole 12 oz bag plus a little extra from another bag}
1 tsp seasoned salt {I used Lawry’s}
ground white pepper
1/8-1/4 tsp cayenne pepper {I used 1/8 since Beth’s breast feeding. For us, I’d have used more}

Directions
As you can see from my ingredients, instead of boiling a whole fryer chicken then using that stock. I bought an already cooked chicken & bought the stock. While Husband took care of the chicken, I mixed water & stock to make a little less than 3 c that I set aside. In a pretty large pot, I mixed water & the rest of the chicken stock. Once that had boiled I broke up the spaghetti into fours & added them to the water.

I sliced the onion {should have done even smaller} as well as the green pepper. I also drained the pimientos. I drained the spaghetti and threw it in what I considered to be a large bowl. Use the LARGE bowl because I had to dump it into another bowl. Add the soups & 2 c of cheese to the spaghetti. Top that with the onion, pepper, pimientos & seasonings. Finally, top with the chicken as well as the stock. Stir it all together. See why I said to use the LARGE bowl?! PW said to taste test. I try to do what she says, so I tasted!

Pour into pan(s). I used a aluminum 9×13 pan for our friends & a 8×11 not as full one for us. Top with remaining cheese. PW recommends another 1/2 c in the cookbook but says more online. I probably did a little more. Recipe says ok to keep covered in frig for a couple days or frozen for a couple of weeks. It didn’t last that long in our house. I covered both and refrigerated for a couple of hours before taking one to our friends & us having the other for dinner.

Bake at 350 for 35-45 minutes. I baked covered for 30 then uncovered for the last 15 minutes. Enjoy! Then keep enjoying the leftovers!

Trying To Conceive

These two pills…

with the help of 8 more over the next 5 nights will hopefully help get us pregnant!

I went this morning & had my first {& hopefully only} baseline ultrasound. To be honest, it wasn’t as bad as I thought it’d be. They definitley have the walk-in crowd down to a science. I signed in, opened Lucky magazine, & before I knew it my name was being called. I was put into a room, told to strip from the weight down & sit on the table. The dr {ultrasound tech I guess} went over what she’d do then showed me “wandy”. Y’all is was definitely a strange falliac looking ultrasound wand. Quickly after, she turned the screen so I could “see” & walked me through what she was looking at. To me it was all fuzzy, but she saw two clear ovaries & lining what it should look like at Day 3. That meant I was clear to go with those pills!

I’ll be going back next Wednesday for a follow up ultrasound to see if the Femera has worked. Fingers crossed y’all!

Captured: Toys

Melissa over at Adventuroo‘s theme for this week is your child’s favorite toy. I love her Captured: the Everyday idea & hated to miss out on this week because we don’t yet have a child or children’s toys here. So I tweeted her to make sure MoeKitty & his toys {aka my furbaby} counted. She said sure & I snapped away Friday night.

Moe’s favorite all time toy was a Target octopus. I bought three of them so that he’d have replacements. Except he loved it so much that he carried it to bed, shook it around all the time, then started eating the legs. We went through all three pretty quick & then I couldn’t find it anymore.

My best replacement is the Wubba Hugga. This pink guy is actually Moe’s second one. The first was blue & loved it then ate the legs {I guess you’ve discovered this is a pattern with him}. He knows that real cats can rock pink, but he hasn’t taken to this Wubba quite like the first. But it’s definitely his favorite go to toy of the moment.

I’ve Made It…

to week 10 of Project 365. And for a week that started with travels & work trips, it’s ended fairly calmly. Since switching to Jason’s phone, I now have a camera phone with a flash. So while not the best quality, I remember to take photos out & about with the phone.

Saturday Day 64 Husband & I made a very quick trip to Northern VA & back to pick up this Evo. Jason’s new {to us} car. Taking it from a souped up rally car to be more street ready is his new {expensive} hobby.

Sunday Day 65 I slept in the headed off to Greensboro with my best buds from work. We met up with some agent’s at the restaurant next to the hotel where the conference was being held for lunch & a few beverages. If the orange cup & wooden plate doesn’t give it away, maybe knowing that it has my favorite grilled cheese & is famous for it’s “owls”.

Monday Day 66 I was at the conference all day, then a dinner meeting & one more night out with agents & friends. No photos were taken.

Tuesday Day 67: After 4.5 hours of sleep the night before, Tuesday I just tried to stay away once I got back to work then collapsed on the couch once I got home. Didn’t pull out the camera.

Wednesday Day 68: Moe helped me go through a week’s worth of mail that had piled up. The spring Lilly catalog was a favorite for us both!

Thursday Day 69:  Wednesday I’d stopped by Outback & picked up a gift card & to-go dinner for myself. I saved half of the Shrimp En Fuego pasta for Thursday’s dinner. But while looking those PW’s cookbook, I decided I HAD to have her hot artichoke dip too. So I made a 1/2 batch. So delicious then, great with lunch Friday & to snack on this weekend.

Friday Day 70: After seeing Suzanne’s happiness post this morning, I added one more place to my errands list for this evening. Costco, Trader Joe’s then Target for a little $17 shoe shopping! They look cute on Suzanne with jeans. I imagine I’ll wear them with skirts & capris this summer. For our “busy” Friday night, I rocked them with my owl pjs. 🙂

Thursday night Moe joined me at the dinner table & he even posed as a model!

Moe got back in bed this morning after I was up & while I was getting ready for work. It cracked me up so I snapped this photo to email to Jason & share with y’all.

I ran out of food while feeding Moe this morning. A fat cat without food is not a good thing, so we stopped at Petco tonight. Y’all Moe was so happy when I set that bag down!
