Bruegger’s Baked Fresh Turns 30

Bruegger’s Bagels officially turns 30 on Feb 7th, but they started the celebration early & in Raleigh to boot {don’t you just love a long celebration?}.

Tuesday morning, I had the awesome pleasure of getting both a behind the scenes tour of a local Bruegger’s bakery & also meeting their executive chef, Philip Smith while he was in town.

Everything was perfect-down to the flowers on our table. Executive Chef Philip Smith introduces himself & Bruegger's bagels. Basic cream cheese versus Bruegger's plain cream cheese. "If it doesn't crunch, it's just a roll with a whole" Chef Smith explains what makes their bagels special.

If you were following along my twitter & IG feeds, you saw some of the deliciousness. I’d guess a lot of my readers have been to one of Bruegger’s 300 local bakeries. But the bagels are even better when you hear the passion from the chef & see & smell & taste exactly how they’re made. With just five core ingredients: flour, water, barley malt, yeast & salt, Bruegger’s makes great uncomplicated bread. They believe in doing better things with simpler ingredients.

Pulling bagels out of the kettle boiler. Boiled bagels are arranged on aluminum trays topped with burlap to bake upside down at 470 for 3.5 mins then flipped.

After watching the bagels from cold fermenting dough to baked fresh perfection using the art & science of baker’s fingers, we grabbed a pipping hot bagel to enjoy. I had a sea salt bagel that I covered with strawberry cream cheese on one half & veggie cream cheese on the other. So delicious! Their cream cheeses are all made in VT & very creamy due to them processing it at a very low temperature. The low temperature helps hold the look & flavor of the veggies, fruits, &/or nuts added to their cream cheeses.

We ended the Raleigh Baked Fresh media celebration sampling Chef Philip’s take on what to do with leftover bagels. We rarely have any left over at my house, but if you do, you’ll have to try this Smoked Salmon & Dill Strata.

Smoked Salmon & Dill Strata
Smoked Salmon & Dill Strata

Ingredients

5 plain bagels, cut into thumb sized pieces
6 eggs, cracked into a bowl
1 lb Brugger’s smoked salmon
1 6 oz tub Bruegger’s Chive & Onion Cream Cheese
1 c half & half
1 stick of butter
pinch of salt & pepper
1/4 c fresh dill, end of the branches, picked into tiny pieces
1/4 of a medium red onion, finely chopped
Pam spray

Directions

Preheat your oven to 350. Spray a 13″ shallow baking dish with Pam.

Melt the butter in your microwave on high for 20 seconds.

In a stainless bowl, beat the eggs until the yolks & whites are blended. Then add the melted butter, half & half, salt & pepper & fresh dill.

Soak the cut bagel pieces in the egg mixture, & using your fingers, work the eggs into the bread, so it is thoroughly soaked & all the custard has been absorbed.

Layer the baking dish with 1/2″ layer of soaked bagels. Top with a layer of smoked salmon {half lb or half the side of salmon}. Dot the smoked salmon with dollops of half of the cream cheese. Repeat a soaked bagel layer & another salmon layer. Dot again with the remaining half of cream cheese. Layer the remaining soaked bagels {this layer will be thinner}.

Top the soaked bagels with the chopped red onions, scattered over the top.

Bake covered for 20 min then an additional 15-20 mins uncovered until the egg dish souffles up & the center is firm.

Bruegger’s recommends serving this with a small salad dressed with lemony vinaigrette. Also note that it can be made the night before, refrigerated overnight then cooked just 10-15 mins longer covered. If you’re like me & not the biggest salmon fan, Chef Smith said you could trade it out for sausage or bacon or even peppers & onions. Enjoy!

Bruegger’s also shares other bagel recipes online. I might have to try the blueberry breakfast casserole at my next big family gathering!

You can take part in the 30th anniversary celebration on Feb 7th by taking advantage of a free bagel with cream cheese until 11a. Download the coupon on their Facebook page or by joining their email club.

Thanks to Bruegger’s for inviting & including me in their 30th anniversary media tour. I loved meeting Chef Philip Smith & the other Bruegger’s representatives. While I was given a great behind-the-scenes tour & bagels, a drink & cream cheese, I was not otherwise compensated for this post. All opinions & thoughts listed as genuinely my own.

Making Us a Priority {eden fantasys giveaway}

I mentioned in my new year’s resolutions post that I really want to make my marriage, my relationship with the husband, a priority in 2013.

We had our first 2013 solo date just a few weekends ago. It wasn’t anything over-the-top: just lunch at Outback with a giftcard. But it was us dining out for the first time since early September. My parents watched L & Z while we relaxed & chatted & filled up on shrimp & flatbread & steak. It was a great way to reconnect & remember we like each other besides the fact that we co-parent the same cute kiddos.

So when I was contacted recently by edenfantasys.com, I thought back to my resolution & checked out their site.

Yes, they do offer a wide variety of sex toys {most of which made me blush}, but I was excited to find they have great bath & beauty products & lingerie that would probably work for my post-partum body.

Things I also loved about eden fantasys: free shipping over $35 {I hate paying shipping} & great sales & promotions. Y’all know I can’t resist a good deal.

Because the people behind eden fantasys want us both to have a happy start to the new year, they’ve offered a $50 gift card to one of my readers to be used on anything of your choice!

To enter, leave a comment below letting me know your favorite way to reconnect with your beloved. Is it dinner out? Just relaxing at home watching TV? Movie dates? Massages? I’d love to hear {& maybe get some ideas}.

For a second entry, follow @suzstreats & @EdenFantasys on twitter & tweet about the giveaway. Leave another comment please after you’ve done so.

If you’d like, you can find them on facebook & sign up for their newsletter, but that’s just for fun.

I’ll close the giveaway Feb 8th at midnight & choose a winner via random.org. I’ll announce who won on the 11th just in time for Valentine’s Day! Good luck!

I was compensated for this post with a gift card of my own to EdenFantasys. Happy Valentine’s Day to us all.

Lucy: Eight Months

My Lucy girl. You’re eight months! So close to ONE that some days I want to put a book on your head & stop time. Other moments, I’m so excited to see what’s coming next from you.

You’ve become our escape artist this month. Daycare calls you a magician. No matter how we fasten you into a seat be it a bumbo or bouncy seat or the circle ones at daycare, you manage to hurl yourself out of them.

Because you want to be on the floor. On the move! This past month, you learned to crawl. And now there’s no stopping you. You’re so cute doing it too ~ arms swing around like a freestyle swimmer, knocking over everything {including your brother} in your way. You can crawl up over toys & into the excersaucer & across the room to get to want you want; typically your brother, toys, car seats or me.

No more putting you in one spot & you still remaining there minutes seconds later. This is very fun but also means that we will soon be breaking out the baby gates & pin we got to contain y’all.

Lucy 8 mos

Your new favorite object is our remote control. You love fighting your daddy for control of it. This past weekend, I bought you a remote of your own at Target. You like it a lot, especially if Dad plays with it first & you manage to ‘steal’ it from him. Speaking of stealing toys, you’re kinda getting famous for this at home. Anything Brother’s happily, quietly playing with suddenly becomes your most.favorite.thing.ever. It’s cute & funny for now. As the bigger sister, you get away with it. But lessons in sharing are coming.

At the doctor last Friday {a follow up to check your breathing from having RSV}, you weighed 16lb 11.5 oz. You’re mommy’s big girl although the PA Thursday kept calling you a lil peanut! Sometimes I forget that you’re actually on the smaller side for your age!

Lucy girl wears mostly 6 month clothes & pjs, but I’ve brought out some 9 month Carter’s outfits & ordered 9 mo onesies from Target for the first Valentine ’s Day.

Loved this so much I couldn't shrink it.
Loved this so much I couldn’t shrink it.

The one size & medium sized cloth diapers fit really well. Although thanks to your first round of ear infections & antibiotics, you’re currently crying through our first bad diaper rash. We’ve been trying the myriad of samples of creams & trying what the pediatrician recommended for fighting yeast. Because of all this, you’ve been wearing your size two disposable diapers recently. I noticed at Target Sunday that you’d fit in size threes now too. I’m not ready for that. Size three sounds all grown up!!

You remind me that you’re not grown up when it comes to eating. You’re so silly. You immediately start complaining when you see that bowl & spoon. Even before you taste the solids. I’m trying my best to outsmart you because I know that somewhere deep down, you’ll love bananas, avocado, peas, & sweet potatoes. Eventually. Thankfully, you’re still a rockstar nurser {morning, evening & occasionally overnight} & drink your bottles down without a hitch every day at daycare.

You’ve slept through the night just enough that I know you can do it, Lucy girl. It takes the perfect combo of a short post-daycare nap, a lot of mommy’s milk & snuggles right before bed. Plus a few sleep dances from me & fingers & toes crossed. 😛 You’re on your way to being a great sleeper & we love to hear you wake up in the morning on your own. All coos & wiggles from your crib {which you haven’t quite managed to escape from, yet}.

Happy eight months {& three days} to you Lucy!

Zach: Eight Months

Happy eight months {& two days}, Zacher!

Much like last month, a couple weeks of your seventh month were spent sick. Colds, pink eye, & RSV are not your friends. Thankfully both in VA & for almost the last week, you Pops was able to help take care of you. Pops & you are best buds. Snuggle partners during the day & night. If you can’t be held or with Mommy, your next favorite person is by far your Pops. It’s so cute to see little you with my big Dad.

And speaking of being little. We’re not trying to give you a complex calling you our Little Guy or Little Dude or Little Buddy. At 13 lbs 10.5 oz {as of your follow up doctor appointment Friday}, you are little. Your pediatrician said Wednesday that you’re boarder line in the 1 percentile. But you’re gaining weight & growing so they {& us} aren’t worried.

You get three 5 oz bottles of Mommy’s pumped milk at daycare & nurse with me once in the morning, usually twice in the evening & at least once overnight. We’ve been trying solids for a while & you’re still not a big fan. This month, we started taking purees into daycare to have Miss Ashton & Miss Mercedes feed you there as well. They seem to be having some successes that Mommy doesn’t always have.

Zach 8 mos + 1 day

We have slowly weeded out most all of your 3 month sized clothing. They were getting too short for your long legs. You fit nicely in 3-6 month Old Navy clothes & pjs; Gymboree 3-6 outfits & we’re transitioning you into Carter’s 6 months clothes.

You can still wear all the small & one sized cloth diapers. You’re still wearing size 2 Huggies naturals without issues overnight.

Oh overnight. You’ve been spoiled when sick by getting your way ~ sleeping in bed with Mommy or on the couch with Pops. You sleep so well cuddled next to your people. But transitioning you back into your crib is tough on you. We’re still working on that this week post-RSV. You’re sleeping in five-six hour stretches most nights which I’m so thankful for.

Our guess is that you might skip official crawling & go straight to walking. You love to sit independently & do a great job with it. We started putting a boppy behind you for support but we don’t have to do that anymore. You can & will go from sitting to on all fours & can move to get something you want. But 99% of the time, you’re content staying still {that is unless Sister tries to run you over}. You’ve begun pulling up on things {the exersaucer, play mat, me} & took steps multiple times last weekend while holding both your Cici & your Pops’ hands. I’m not ready for that Buddy!

I can’t wait to see what you’re being eight months brings us!

Happy Momma’s Break Day

Oh MLK. Thank you for your dream & for my work believing as I do that you’re worthy of a holiday. Thank you too that our daycare remained open.

Before the RSV diagnosis of last week {also see why I’ve been blog MIA} & husband’s bout of flu at.the.same.time, I had lofty plans for today. To do all the things! Shop! Sleep! Read! Blog from my laptop instead of cell! Catch up on photo editing! Cook & bake & make baby food!

The the sickness came {back} to our house leaving me single parenting two sick babies with the help of my Dad & the my mom. And my doing everything possible to stay well. So today, even though the babies are just starting to feel better, we packed them up at 10a & dropped them at already paid for care. I raced home {after splurging on CFA & stopping for bananas}, to pump & then nap. Nap without an ear out for crying babies & half an eye open watching the monitor. It was an hour & a half of glorious.

Then, because I still wanted to do all things, I ate, pumped again, baked pumpkin muffins & made avocado & banana purées. I didn’t really shop {I don’t really count online right?!} or get to read more of the hilarious Jen Lancaster’s new book & my DVR is still full. But that’s okay. I got my {much needed} break.

And I’m on my way to pick up L & Z on their 8 months old day a few hours early having heard from their teacher that they were fussy & crying most of the day. I’m feeling a bit renewed. My patient momma tank a bit more full. Ready to see how the evening goes & {never thought I’d say this} looking forward to getting back to work tomorrow.

Ever taken a Momma break day for yourself?
